Comments (9)While it's perfectly fine to use wing tips for stock, try roasting them in rendered butter (ghee) for the ultimate crunchy snack. Lots of connective tissue make them a great source of collagen. LCHF friendly. Pat dry your wing tips with a paper towel and season generously with salt, paprika, dried garlic and freshly ground black pepper. Let them stand for half an hour. Preheat your oven to 190° C (380° F). Melt a couple of spoonful of rendered butter in a baking tray, add the wing tips and mix them well with the fat. You should keep then in a single layer. Bake for 15 minutes, then remove from the oven and stir. Return to the oven and bake for another 10 minutes. After that, you can take them out, or, for extra crispinness, put under top grill of your oven for another couple of minutes. Remove from the tray using a slotted spoon, put in a large bowl and serve with a dipping sauce of your choice (dairy-based sauces are great for this). Comments (2)I looked up Dale's and one description is a cross between soy sauce and liquid smoke. Very interesting website with a lot of history in Birmingham, Alabama. I found this recipe on their website and they sound pretty darn good. daleÂs Wings You need: 1/3 c. daleÂs Seasoning 2 Tbsp vegetable oil 1 ½ Tbsp chili sauce ¼ tsp garlic powder Dash of ground red pepper 3 lbs. chicken wings Combine all ingredients except chicken wings in a large plastic bag. Add chicken wings; seal bag securely and shake bag well. Marinate chicken wings inside refrigerator 4 hours, turning occasionally. Remove chicken wings. Place wings in a baking pan. Vegetable oil (for frying) 1/4 cup butter 1/4 cup Crystal Louisiana Hot Sauce Dash of ground pepper Dash of garlic powder 1/2 cup all-purpose flour 1/4 teaspoon paprika 1/4 teaspoon cayenne pepper 1/4 teaspoon salt 10 chicken wings, cut into thirds and wing tips discarded (defrosted and dried if frozen) Bleu cheese dressing Celery sticks Heat oil in a deep fryer to 375 degrees F. You want just enough oil to cover the wings entirely - an inch or so deep at least. Combine the butter, hot sauce, ground pepper and garlic powder in a small saucepan over low heat. Heat until the butter is melted and the ingredients well-blended. Combine the flour, paprika, cayenne pepper and salt in a bowl. Put the wings into a large bowl and sprinkle the flour mixture over them, coating each wing evenly. Put the wings in the refrigerator for 60 to 90 minutes. (This will help the breading to stick to the wings when fried.) Put all the wings into the hot oil and fry them for 13 to 15 minutes or until some parts of the wings begin to turn dark brown. Remove the wings from the oil to a paper towel to drain. But don't let them sit too long, because you want to serve the wings hot. Quickly put the wings into a large bowl.
