@jscout - Funny about your heat zone suggestion. I had to cook that way since my old range had various burner sizes and one side got hotter than the other. It's fine to push cooked food over, but when making pancakes and stuff that I want to cook quickly and evenly, it drove me crazy. In fact, it was one of the reasons I opted for all the same size burners and the CC. The 7 gauge griddle will have lots more room to experiment. I ordered the pan on Monday and will have it tomorrow, can't wait. Thanks for the good suggestion about the surface thermometer too! Next up, a new, bigger wok since I am keeping the CC wok grill on the range. Thanks to the good advice of GWers, I am leaning toward a hammered wok form the Wok Shop. Just have to decide on the type of handles, wood/steel, long/spool...

I am surprised by the level of blasé attitude some writers offer in this thread. An oven door shattering is terrifying and should not happen. If the manufacturer knows this to be a common defect, then they need to address this through materials processing. Glass is a very well understood material which we've been perfecting for 2000 years. As a glass blower I know that there are times when materials are not stable because of processing or impurities in the glass, or what the glass is designed to do, but an oven door should be designed to withstand the high heats which we know it will encounter. It is not the same thing as taking a handblown wine glass and having it shatter in the dishwasher. We know the wine glass will shatter because it isn't made of glass that is able to withstand that kind of contraction and expansion. It is outrageous that GE would even suggest charging someone and treat this as a minimal inconvenience. My oven door shattered 8 days after installing a brand new GE Cafe double oven. This is unacceptable, full stop. The glass dust which is now throughout the oven cannot simply be vacuumed away with any level of assurance that would ever make me think I could cook in the oven without glass dust circulating. Glass dust as small as .05µm is dangerous. That's like suggesting I should vacuum off the glass bench and be able to make a sandwich on it. This is absolutely outrageous.

Hi everyone, Just wanted to let you know that once again Capital has proven themselves as having outstanding customer service. Joey has contacted me, and I have just sent him photos of the burners on. I did fwd my email that I had sent to Bob to the general customer service email address and they forwarded it to Joey. They are graciously replacing my discs and the burner grates. I consider this above and beyond. I fully expected an explanation on how to get the grates to look black again. So this is why people love Capital. When a problem arises, they do help. And Trevor. You truly are wonderful. I had copied the salesman at the local store where I bought my range on my note to Bob (last Friday), which included the photos. It's sort of sad that a Capital dealer in MA responds to my concerns and yet my local store does nothing. Then again, I'm not surprised. Thank you Capital and Joey for restoring my faith in Capital! Fortunately, ANSI standards are available online. Unfortunately I have never seen them available without charge. I read a post where a woman had bumped up against the top edge of a Wolf oven door when it was open and burned her leg, so of course I just had to touch the top of the oven door on our CC after cooking a pizza at 425 deg. It was only slightly warm, just a little above body temp. The CC has the coolest oven door on the market, notice that the glass is three layers thick. With the convection on it does get warmer, hot enough to kick on the cooling fan under the front panel intermitently, but I never checked the temp after using the convection mode. The fan has never kicked on using the regular oven mode. Maybe it is the same situation with the Wolf. Above all else your friend needs to train her children to stay away from the range. We have never installed the anti tip brackets on any range we have owned, nor have we ever had a child, or grandchild burn themselves on any range even the cheap old pieces of crap we had when our children were young. The Wolf is a very nice reliable range, your friend just needs to make her children aware that it can get hot, unless they are really stupid they will not burn themselves more than once.
