Wolf oven overheating after using main oven

Our oven is about 15 years old, and about 3 years ago or so after using the main oven the console would start flashing and blinking, so it didn't really present a code. Over time, usually a few hours, the blinking would stop and then the clock would then blink indicating a power outage.

We've had official repairs done twice and replaces several components but never was able to solve this issue.

I suspect there is an overheating issue, as after using the oven at about 300 deg F the fans stop, and if I open the oven and put a portable fan to continue the work, we don't see this strange behavior of random console flashing.

So then I'm thinking a sensor is out preventing the fan from continuing, but the repair ppl never mentioned it.

Has anybody else had issues similar to this ?
