"What would you say is the biggest difference between the gas or electric for the main oven" There are some very specific differences. Most people like their food to be browned because it adds flavor to what you are cooking. In order for food to be brown, the Maillard reaction must take place. In order for this to happen, need to evaporate water. I would look at what happens in either oven. In a gas oven, there is moisture released in the combustion of gas but because there is much more ventilation in a gas oven, it and the moisture from what you are cooking are ventilated out so you have superficial drying of your food which promotes browning. This will also add more heat to your kitchen. An electric oven is more of a closed system so will hold on to the humidity more. You can increase the superficial evaporation in an electric oven by increasing the heat or using the fan. In reading some marketing materials, Wolf and Capital, come to mind, they will state that gas is "moist heat". In the past that was the belief. That would be true of the flame but does not take into consideration the oven as a whole and the effect it has on what you are cooking. They also seem to think that the external moisture from the "moist heat" produces moist meat when it would have nothing to do with it. It is a function of the internal temperature. There are certain irreversible physiological changes to meat as the temperature rises which dictate the amount of moisture in meat fibers. Some also attribute crispiness to the moistness but again is is drying that produces that. On on the other hand, an electric oven can hold on to moisture which can be a benefit in baking because it promotes starch gelatinization. It can affect the amount of rise, browning and crust formation. This is why bread bakers add moisture at the beginning of baking and/ or use a cloche in a gas oven. The cloche is then removed or moisture allowed to escape and the drier environment promotes browning.

I have a Wolf range I purchased 5 years ago, and the operating instructions were adamant about not using liners or aluminum foil in the oven. Check your instructions for care of your oven, and if it's not clearly addressed, call Wolf and ask them. It would be a shame if your new oven were ruined by a product not cleared for use in the Wolf. I can tell you, after 5 years of cooking with my range, that the oven clean feature works wonderfully well, and has cleaned up that blue interior so it looks like new. Also, pay attention to wiping up spills soon after they occur, as that will help your oven stay clean too. The instruction book provides great info on how to use/maintain your new range.

Update: Service tech just came out and after quite a bit of hassle, finally got the door open. He talked to a Wolf rep and they think the wrong latch was installed after my MDL error code. So they are going to order a new latch as well as a new relay board, since that might have been damaged with the wrong latch. So far sounds okay to my novice ear. But, after he left and I was cleaning up the residue from the cleaning mode, I noticed there was some blue porcelain flakes on my rag...on closer inspection, there is a gash-like mark just a little under 1/2" long on the right front side of the oven. Do you think this is from the high heat of the self-clean? Never noticed this before and I have been diligent about checking this. I'm not sure how problematic this is or could be. Thoughts?

@Amy Cantu We've been in our house for 6 mo now and I really like the GE Monogram oven. I haven't actually used the speed oven functionality of the speed oven. Just the microwave. And even then, we just use the add 30 sec option. I need to sit down with the manual and experiment with it. Unfortunately, using the speed oven is not as simple as just turning it on. It's pretty complex. I remember when I tried the speed oven at my friend's house it was really hard, and I thought I'd need to dedicate some serious experimentation to getting it to work for me, and doubted that I would ever bother using it as an oven except for Thanksgiving, which hasn't happened yet. My motivation to learn how to use it has been even less than I expected, so I'm sorry to say I can't report back. I also haven't tried using the oven probe functionality for the oven (haven't cooked a roast yet). Need to find the oven probe along with the speed oven manual! But I have done a ton of baking and roasting of vegetables and have been pleased. We were living in a rental house with a viking range and the GE monogram oven is 1000x better than whatever model of viking oven came with the range in the rental. Much more even. I've done two cakes side by side and they came out beautifully without the need to rotate. With a sheet of cookies I notice that sometimes a corner might brown a little quicker than another corner, but not so much that I really need to worry about rotating the pan halfway through. Broiler also works great--I've been making a lot of toast to go with steak tartare and an entire pan filled with toast toast 100% evenly under the broiler--hooray!
