Comments (4)Hint: I buy the rotisserie chicken from WalMart/Publix Here's white chili with my rendition: 1 can chicken broth 1Tbl olive oil 2 boneless chicken breast, chopped ***I use WalMarts whole rotisserie chicken and shred it. I just eyeball the chicken 1/4 cup or more chopped onion 1 4 oz can green chiles, chopped ***I puree mine with my hand blender WITH juice 1 19 oz can navy beans, undrained 1 tsp garlic powder 1/2 tsp cilantro ***I use instead 2 tsp chili powder 1/2 tsp oregano 1/8 tsp red pepper Sauce chicken and onions 4-5 minutes in olive oil **If using Wal Marts cooked, saute onions only till translucent Stir in spices, broth, simmer about 15 minutes, then add beans and shredded chicken and simmer 5 more minutes, to get the flavors blended. Comments (7)Lois, my first experience with white chili was bland too. This is the one I came up with and I like the beans pureed to thicken the soup...no cream. Then, be sure and top with the black bean and corn salsa for the supper bland beater: Black and White Chili 1 pound ground chicken (or turkey) 1 tablespoons olive oil 1 onion; chopped 2 cloves garlic; minced 2 teaspoons ground cumin 2 teaspoons chili powder 1 Pablano pepper; roasted, seeded and chopped (or 1 can green chilies) Kosher salt to taste Fresh ground pepper to taste 3 cups chicken broth 28 oz. can cannelloni white kidney beans Handful fresh cilantro; chopped Black bean and corn salsa (must have) In a large soup pot, cook ground chicken in olive oil along with onion, garlic cumin, chili powder, n salt and fresh ground pepper. When chicken is cooked thru and onions are tender, add chicken broth. Puree beans with sauce in food processor until smooth and stir into chili. Simmer chili at least 30 minutes to blend flavors or longer to cook down and thicken more. Taste and add more salt and pepper if needed, stir in cilantro. If it gets too thick add chicken broth to thin. Serve topped with black bean and corn salsa. Comments (9)These are good...you may want to try them using all turkey. This was originally posted as a low cholesterol recipe so you may want to just use regular instead of Omega 3 eggs. Makes 8 medium patties 1 1/2 lb ground turkey, chicken or a mixture of both (about 700 grams) 2 slices firm wholegrain brown bread torn into small bits 2 omega 3 (low cholesterol) eggs, beaten 1 small onion - minced 1 TBS finely minced almonds or ground almond (optional) 1/4 teasp dry mustard eg. Colman's 1/8 teasp ground sage (optional) 1/2 teasp ground thyme 1 teasp salt 1/4 teasp fresh ground pepper 1/4 teasp ground nutmeg 4 TBS tomato purée or tomate frito (can also be condensed tomato soup) for mixture plus 2 TBS more for sauce 1/2 cup finely grated carrot 1/2 cup finely chopped or grated celery 1 cup low sodium chicken or veg broth olive oil for cooking 1. Mix the meat with the beaten egg, onion, seasonings, bread and almond crumbs, grated carrot and celery, 4 TBS tomato purée. Mix well together with hands. 2. Divide mixture into 8 portions and form with hands into 8 equal patties. 3. Heat about 2 TBS oil in large non-stick frying pan and when hot, add four of the patties, cook about 4 minutes then turn them over. Turn down heat to low, spoon 2 TBS of the tomato purée on top of the 4 patties, add half the broth to the pan plus one TBS of remaining tomato purée, stir liquid, put on lid and simmer for about 8 minutes. Comments (21)This is my favorite recipe but it calls for filet mignon so I save this one for when we may have guests (we sponsor local college students who often come for dinner, or if dh is having a couple friends over for a football game, etc). A friend of mine gave me the recipe - she found it online and made it for a chili cookoff and everyone raved about it. It apparently originated at Gallagher's Steak House in NYC. Please note that this is obviously for a large group. I either halve the recipe when I make it or I freeze half of it. I also don't think I use nearly that much butter, nor do I add any at the end like it calls for. Gallagher's Guinness & Filet Mignon Chili Gallagher's Guinness Stout & Filet Mignon Chili CDKitchen http://www.cdkitchen.com Serves/Makes: 15 | Ready In: 30-60 minutes Ingredients: 1 cup salted butter 1 pound filet mignon, cut in 1/4-inch dice 5 pounds ground sirloin 2 cups onion, cut in 1/4-inch dice 1 chile pepper, seeds and veins removed, cut in 1/8-inch dice 1/2 cup Guinness stout 1/4 cup flour 2 cups crushed tomatoes 1/4 cup tomato paste 4 cups beef stock 1 cup black beans, cooked or canned (rinsed and drained) 1 cup kidney beans, cooked or canned (rinsed and drained) 1/2 cup chili powder 1 teaspoon ground cumin 1 tablespoon kosher salt 2 teaspoons ground white pepper 2 tablespoons dark brown sugar 2 cups shredded cheddar cheese ***Garnish*** sour cream diced red onions diced bell pepper shredded cheddar cheese diced tomatoes chopped fresh cilantro Directions: Heat a large saucepan or Dutch oven over medium high heat. Add half the butter. When melted add the filet mignon and cook, stirring occasionally, until browned. Add the ground sirloin and cook until no longer pink. Remove the meat and set aside. Drain off all but 2-3 tablespoons of grease from the pan. Add the onion and chile pepper to the pan and cook for 3-4 minutes or until the onion is soft. Return the meat to the pan and add the Guinness. Bring to a boil for one minute. Add the flour, stirring constantly for one minute. Add the crushed tomatoes, tomato paste, and beef stock. Stir to mix well. Reduce the heat to a low simmer. Add the black and kidney beans, chili powder, cumin, salt, white pepper, and brown sugar. Let simmer for 30 minutes, uncovered. Stir the chili occasionally. Add the remaining butter and cheddar cheese. Stir well until the butter is incorporated and the cheese is melted. Serve hot.
