Food Saver bag vs. ZipLock for brine pork belly ??
Comments (3)Instead of using the largest sized gallon Food Saver bag, suggest you use the roll material. The rolls are about 22 feet long by 11 inches wide. Because of the maximum width of 11 inches, you may be limited as to the width of the meat you want to brine. But keep in mind the length can be many feet long if need be. Some food Saver machines will allow an immediate seal, and will stop the vacuum process. Mine has a button to do a fast seal, but sometimes it will not function and will start pulling a vacuum no matter how I push the fast/quick seal button. Because I go through quite a lot of the rolls and prefer to make my own bag sizes, I also bought an impulse sealer. These are adjustable in their heating and I have even use them to make small bags out of some garden fabric thats used as row covers. These porous bags are placed over ripening fruits on the trees to block bugs a birds. The only concern would be that the bag would have to lay a bit flat with a liquid in it, and if the sealer starts a vacuum as well as a seal, you could pull in liquid. The main reason I use the vacuum canisters to brine is because it opens the pores in the meat and allows the air out, while pulling in the brine. If you do brine without the vacuum, be sure to give it at least another day or two in the fridge. Comments (6)I apologize for not answering your main issue, which was around finding a sealer that does not require you to hold it down while sealing. I had never had a vacuum sealer until I bought the Professional II and it is easy to use, as you no not have to hold it down. Everything is automated. Keep in mind that manufacturers have gotten really good in determining which extra features consumers are willing to pay for, which is one reason that the extras often cost so much more than the basic model. This is called "price discrimination" and is a widespread marketing and product positioning technique. It may not even cost any more to make a model with more convenient features than the basic model, but they will charge extra for them anyway as a way to segment purchasers in a way that allows them to maximize profit. So when they say "you get what you pay for" this is not just because better designs cost more to build (which is not always the case), it is also because customers that can afford it are willing to pay for those better designs. Comments (20)My dh was the one who initially wanted a FoodSaver. I really didn't think it was a necessary purchase--but I have since become a true convert! We got ours at least 6 years ago and it's still going strong (got the FoodSaver Gamesaver model from Bass Pro/Cabela's b/c we had a gift card). Not only is it great for buying meat in bulk and then using the bags to divide/store in smaller portions, but the canisters are great for things like refrigerating lettuce and even strawberries--both last waaay longer before wilting/softening. You can freeze liquid leftovers (like soup)--just freeze overnight first w/ a clip on top, then you can seal it and freeze longterm. I also like it for things like cooked ground meat--I usually date it and label it and throw it in the freezer (i.e., "1.5 lbs cooked ground chuck, 12/13/10"). It lasts a long time this way, and when I need a quick supper plan, I can just grab it, defrost and add taco seasoning or spaghetti sauce or...you get the idea. I do occasionally use it for marinating; it does speed up the time needed for this. There is a Quick Seal option (or something like that) that works well to reseal things like bags of fish sticks (blech--but my kids think they're great as an occasional special treat!) or pizza rolls, for example. Also, like joyce 6333, I use it for cereal bags and crackers. Much better than folding up and clipping w/ a clothes pin! So all in all, I definitely would recommend the higher end models. (grin) I'd love to have you, and I wouldn't even make you do clean up. Seagrass, I'm happy to see you again, I hope your holidays went well and you're feeling good. Molly is just a dog, I guess, we don't know what she is. She came from a local shelter who "thinks" she is a Sheltie/Beagle mix. I see the Sheltie a little, but not the beagle, maybe a spaniel of some type. She's just a dog, and has become Elery's constant companion. All 60 pounds of her will lie on Elery for a nap, LOL. Sleevendog, I'd just purchased 10 pounds of green coffee beans, or I'd have considered that. We didn't do many gifts either, I got the Foodsaver and Elery got the Cabela's certificates, and that was it. As for the jalapeno, well, I'm a heat wuss, so it probably wasn't that hot, just too hot for me! Peppi, I'm out of bags, and was using the leftovers, and that one was a bit small, so I think that was the problem. Molly did get her share of liver, but you probably knew that. I do have a recipe for liver dumplings, but no one will eat them except me. Well, I'll bet Molly would, now I think of it. Alexa, other family members have taken half a dozen deer off the farm this year, it's about Elery's turn. The deer stand at the feeders with the horses and eat hay, so I think if I feed them, I get to eat them. The Princess did shoot her first deer this year, now I'm lobbying for her to learn to shoot geese or turkey, the other wildlife we have a zillion of.
