OK, so that seems a strange combination, but not really.

Thanks to some very pointed hints from Peppi, Elery bought me a new Foodsaver as a Christmas gift. I had a "mini", the darned thing was/is a piece of carp. It worked about half the time, and you had to hold the bag in the machine while simultaneously holding down each corner of the device to activate the vacuum, a cinch if you have three hands, LOL. Then, nearly every time, the sealed package would come "unsealed" in the freezer, I hated the blasted thing.

So, Elery bought me this one. The reviews were great and it's a lot easier to use.

I got Elery gift certificates from Cabela's, he wants to buy a crossbow or a new deer rifle, so I told him we had everything we needed to package venison. Well, except the deer, LOL.

However, we had venison in the freezer from last year, so Elery decided to make some sausage. Jalapeno sausage, a bit too spicy for me to eat too much of, but still good. The casings were a bit large:

You notice Molly is just waiting to try it, she at least has learned not to counter surf while we're watching!

Because the casings were large, we cut the sausage into four kind-of-close-to-equal pieces.

Three got packaged with the new Foodsaver, but the last one got sliced into individual slices and then packaged up. Note that the one in the back is nicely sealed, but the front package had already lost vacuum. We're chalking that up to "learning curve" and eating it first. (grin)

Not to be outdone, and after sleevendog's discussion on boudin, I decided to make liverwurst. I started with the lpoli site and took a few liberties, as usual. The recipe called for finely ground pepper but I had some crushed black peppercorns from the Christmas Steak au Poivre, so I used them. It called for cure, which I left out, and I only had beef liver, so I used that along with ground pork:

OK, this was good enough that I was surprised. Since I have....oh....18 pounds or so of liver in the freezer, I'll be making some more, LOL.

Molly liked it so much she went right out to the farm and tasted a pig, just to see if it was ready to eat yet.

It's not. :-)

I get such a kick when reading a post like this from you! I always wish I was right there in the kitchen during the fun/work. I would gladly do the cleaning up just to be a part of it all!

The young hunter is not accused of doing anything illegal, but the head enforcement officer for Alabama's wildlife agency said agents are trying to determine if anyone broke a state law prohibiting the transportation and release of live feral swine. "There are some questions about where the animal came from, how he got there, how long he'd been there," said Allan Andress, enforcement chief for the Alabama Wildlife and Freshwater Fisheries Division. Andress said officials also will review whether the hunt complied with the state's "fair chase" law, which requires that prey at hunting plantations have a reasonable chance of escape. Eddy Borden, the owner of the spread where the hunt occurred, declined comment on how the hog got into the 150-acre fenced-in area where it was killed last month by Jamison Stone of Pickensville. Borden said he was getting tired of questions about the hog, which Jamison's father said weighed 1,051 pounds and measured 9 feet, 4 inches from the tip of its snout to the base of its tail. The kill drew international attention. "I didn't ask for the publicity. I just want it to all go away," said Borden, whose Lost Creek Plantation is located in east Alabama. Keith O'Neal, one of the guides who accompanied Jamison and father Mike Stone on the paid hunt, said he was unsure if the super swine was placed in the enclosure or grew up it. Jamison was hunting with his father and the guides on May 3 when he killed the giant pig. He said he shot the huge animal eight times with a .50-caliber revolver and chased it for three hours through hilly woods before finishing it off with a point-blank shot. Mike Stone said neither he nor his son did anything wrong. "It's an 11-year-old boy who went hunting," said Mike Stone. "He was enjoying all the attention at first, but it's all getting old." Andress said there is nothing illegal about a child hunting in Alabama.

Like Cheryl, I regularly have whole pigs packaged. We usually have one side of the loin made into pork chops and the other into loin roasts. Ribs are a given, of course. Hams are smoked and one is cut into half for two ham roasts, used for family dinners, the other is sliced about 3/4 inch thick for ham "steaks" for breakfast. Bacon can be smoked but we usually ask for the belly left whole so we can smoke it ourselves. I've also made pancetta using the recipe in "Charcuterie". It's easy as long as you have somewhere the correct temperature to age it, I used Elery's basement because mine was too warm. The hocks are smoked for beans and the jowls are made into jowl bacon. The "picnic", butt/shoulder are left unsmoked so that we can smoke them for pulled pork, but if you don't have a smoker you'll probably want that done for you, along with the bacon/hocks/jowls. A pig can have a LOT of fat, so you might want to specify how much you want to get to render, LOL. I also get the liver because it makes great dog treats, along with the heart and tongue. I let the butcher keep the kidneys. You can pickle the trotters (feet) if you wish, I don't any more. Anything else gets ground. You can have it made into sausage if you wish, and they'll link it if you pay extra usually. I get mine just ground without seasonings and make sausage as it suits me. Many packagers now have several "blends" and they'll make various sausage mixtures for you. I'd rather do my own. Yum, as Cheryl said, there's a year's worth of good eating there. Homegrown pork is usually more flavorful and not as lean as commercial pork, plus none of those "flavor enhancers". You'll have to experiment with your own pork, I've raised some that greatly benefits from being brined or marinated, the last one I got is perfectly delicious without anything at all other than salt and pepper. I usually have mine packaged for two people, other than the ham halves, because it's easier to thaw an extra package than to try to refreeze it or use it up when the package has been opened for company or whatever. I know many of you have made sausage, so I hope this isn't too detailed. Our Smoked Hungarian Kielbasa (Kolbász in Hungarian) recipe: 10 lbs. pork, trimmed of gristle and bone and cubed (we use 90% pork butt or picnic shoulder and 10% pork jowl) Or 50% venison and 50% pork (using venison, we increase the pork jowl, for example 5 pounds of venison, 3.5 pounds of pork butt and 1.5 pounds of jowl) or 60% venison and 40% pork or 70% venison and 30% pork or use whatever meat combination you like. For each pound of meat, these are the spices we use initially (we final season and taste it later): 1/2 teaspoon salt 1/4 teaspoon pepper 1 teaspoon paprika (sweet Hungarian) 1/2 teaspoon dried marjoram 1/4 teaspoon dried savory 2/3 teaspoon good garlic powder (not garlic salt) 1/2 teaspoon yellow mustard seeds For a 10 lb. batch, we use a total of these ingredients: 2 cups powdered milk 2 tablespoons sugar 1 teaspoon powdered mustard 2 cups liquid (we used 1-1/3 cups of water and 2/3 cups chardonnay wine) Pictures are from an all-pork batch, so if you're using a mixture, get a good mix on the trays. Freeze the meat. Put your cubed meat into the freezer until partially frozen. This allows the grinder to cut the meat cleanly. Shallow trays or cookie sheets work great. Keep everything very cold from start to finish. We even put the grinder parts in the freezer. We mix the seasonings, powdered milk and the liquid together, blend well and let sit in the fridge for a while to meld the flavors. Here’s our meat coming out of the grinder (excuse the mess :-). We like a medium grind, but it's personal preference. Put the ground meat into a mixer or a very large pot or bucket if you’re going to mix it by hand. Add the seasonings. Thoroughly mix the seasoning liquid into the meat, while retaining the texture and not “mushing” the meat. This is hard to do when you’re mixing by hand - your hands will be numb from the cold and your arms will hurt from trying to stir with a spoon. We did it that way for years, so I literally feel the pain. If using a mechanical mixer, don’t overmix the meat. We did ours for only about a minute. Take a small ball and make a patty for tasting. Fry in a pan until cooked through and check the seasonings. Don’t try to cook it in a microwave - you won’t get the same flavor as frying it on the stove. We needed a bit more salt (about another tablespoon), a bit more sugar (about a tablespoon), and a bit more liquid. We mixed the salt and sugar into another 1/4 cup of chardonnay and mixed the meat for just a few more seconds. We’ve learned it’s better to slightly under-season the sausage if you’re not sure. Here’s what our meat looks like after mixing. Still a lot of texture but the orange from the paprika is pretty evenly disbursed throughout. Chill the meat until you’re ready to begin stuffing. You can leave it in the fridge overnight if you like. Lightly pack the meat into your stuffer. This is a hand-cranked one that holds about five pounds of meat. Casings are pretty sturdy and they will stretch quite a bit. Stuffing is one of those things that you just have to practice. Start stuffing. Stuffing is easier with two people - one to crank and the other to form the sausage. DH cranks and I make sure the casing is evenly filled (don’t overstuff or the casing can split) and keep as much air out of the sausage as possible. If I get any huge air bubbles in the sausage, I just prick it with a needle or pin. We’re making “horseshoes” about 20 inches long. It also helps to put some water on the table so the sausage glides around and doesn’t stick to the countertop. When they’re long enough, stop cranking the stuffer and tie off the end tightly with another piece of string. Leave the string ends about 4-6 inches long, so you can hang these after smoking. Tie another piece of string about an inch or so away from the sausage end (this will be the beginning of the next horseshoe) then cut between the two pieces. Put them into the refrigerator overnight, uncovered, to blend the flavors and dry the casings slightly. The next day, we’re ready to smoke them. We have a smoker box in our gas grill - if you don’t have one of those, just make a pouch of heavy-duty aluminum foil, fill with soaked wood chips, poke a few holes in the top, and put it right on the grill. We're using mulberry, pecan and apple wood. The fire bricks act kind of like a pizza stone to absorb the heat and they also protect the sausage if the wood in the smoker box happens to catch on fire (which happens often - keep a spray bottle of water handy). Smoke the kolbász until the internal temperature is 150° F. It took ours a little over three hours to reach that temperature (and it was about 38° outside for reference). When done smoking, drop the kolbász into an ice bath to quickly bring the temperature down to about 90°. Then hang at room temperature overnight to cure. For long-term storage, we’ll vacuum seal and freeze them.

Fantastic looking sausage! Too funny about Molly and the pig, I'm sure she was just telling piggy where to hide out to avoid being Food Saved.

Elery is amazing; the HG doesn't know what that "thing" that sits on the counter is. Okay, maybe he does; I'll test him and report back.

The sausage looks wonderful and I would love the kick of Jalapeno. Good luck to Elery with the new firepower - looking forward to hearing about other creative ways you will be using the venison and 18 lbs of liver! LOL!

My dear, I only played Santa's elf. In fact, when I told him they were on sale, he told me you had one. Yeah, a lemon one. I just planted the seed, the rest was up to him.

Now remember, the open end need to be smooth and "grease" free for a good seal. Looks to me like you have a small wrinkle at the seal. And wrap the products in a baggie then into the bag.

As for the liver, grind some up and make liver dumpling soup, cook some for Miss Molly as a treat. You can bake it into dog treats for a dryer version.

Now if you have duck liver, make pate!

My food saver is having trouble. I'm pushing down one edge firm...just changed the two rubber seals....might have a clog in the air extraction but it does move along, just will not switch to 'seal'. Sometimes I will seal it, then slide it a bit out and give it a second seal.

Elery, (hands on my hips), needs to lighten up the hottie peppers so you can enjoy it! lol.

I gave a 40lb box of green coffee beans. Came just in time to slap a bow on it, lol.
I got a salt block, a biggie...8x8x2inch thick.

Not many gifts this year. Just quiet time and some home chores. And hopefully ovens installed soon.

Cute Molly seems to have settled in.

Molly looks like an Aussie. Is she? We have 2 - a big old male blue merle and a nutso 2 year old black tri female. Lost our original girl in 2012.

Kat and Nanny, you're welcome any time. I just finished canning broth and dehydrated 30 pounds of garlic, so my kitchen smells.....well, it just smells. (grin) I'd love to have you, and I wouldn't even make you do clean up.

Seagrass, I'm happy to see you again, I hope your holidays went well and you're feeling good. Molly is just a dog, I guess, we don't know what she is. She came from a local shelter who "thinks" she is a Sheltie/Beagle mix. I see the Sheltie a little, but not the beagle, maybe a spaniel of some type. She's just a dog, and has become Elery's constant companion. All 60 pounds of her will lie on Elery for a nap, LOL.

Sleevendog, I'd just purchased 10 pounds of green coffee beans, or I'd have considered that. We didn't do many gifts either, I got the Foodsaver and Elery got the Cabela's certificates, and that was it. As for the jalapeno, well, I'm a heat wuss, so it probably wasn't that hot, just too hot for me!

Peppi, I'm out of bags, and was using the leftovers, and that one was a bit small, so I think that was the problem. Molly did get her share of liver, but you probably knew that. I do have a recipe for liver dumplings, but no one will eat them except me. Well, I'll bet Molly would, now I think of it.

Alexa, other family members have taken half a dozen deer off the farm this year, it's about Elery's turn. The deer stand at the feeders with the horses and eat hay, so I think if I feed them, I get to eat them. The Princess did shoot her first deer this year, now I'm lobbying for her to learn to shoot geese or turkey, the other wildlife we have a zillion of.

Cathy, I'll be waiting to hear if HG knows what that thing is. He might surprise you. Then again, he might think it has something to do with gift wrapping or knife sharpening, LOL.

Well, Annie, I had DH read your post hoping that he would note the "Elery bought me a new Foodsaver as a Christmas gift." Alas, your beautiful sausage pictures and references to liverwurst took DH down a merry memory lane of eating incredible "braunschweiger and mustard" sandwiches as a kid. I tuned out because I had a feeling that "Wonder bread" was going to also be referenced:)

Bless Elery's heart for getting you something you really wanted and needed. Of course, he knows its to his benefit, too. And getting him the gift cards was a wonderful idea. Bet he gets a very good rifle.

Years ago everyone in our families decided that no gifts would be exchanged due to so many being in tight situations. We bought for our moms and my dad when they were still living and the kids. Well, there's only two kids left so we bought for them and were all able to get together on Christmas Day for a really good family day. It was wonderful.

I just love your sweet Molly. I'm afraid if she were mine, she'd be getting healthy treats all the time and be so very spoiled rotten.

Madonna, we've pared down the gift ist and pared down the gift list. We mostly get gifts for the grandkids, we have 10 of them now between us, with #11 coming in June from/to Elery's youngest son.

Molly gets lots of treats, many of them healthy. I say many of them because we try to be careful but the kids feed her everything from bits of steak to peanut butter pie. No wonder she loves kids. She's a sweetie, though.

Cathy, I liked braunschweiger and mayo sandwiches on squishy white bread. Now I like them with grainy mustard on dark rye. Mmmmm.

Mother says my Grandfather used to eat fried liverwurst on pancakes. A pancake, butter, fried liverwurst and dark Karo syrup over the top of it all. Ugh. I'll stick with mustard and rye but I sent Mother home with a chunk of liverwurst today, she can do as she pleases with it, LOL.
