A window installer wants to do what???

Looking for pro window installer advice here. I'm getting new replacement windows. I have a cedar home with windows trimmed out with the traditional wood brickmoulding that butt up against 1X6 cedar exterior "window frames". Unfortunately, many of the window brickmouldings are FLUSH again the cedar board so only 2 sides of the brickmould are visible.

My window contractor says his "master installer" wants to simply lay the new aluminum window trim flat against the brickmould without slicing a grove between the moulding and cedar board to "tuck" the aluminum trim around the back of the moulding. (Hopefully this makes sense.) Me and a 2nd-place contractor think the trim has to wrap 3 sides of the brick mould for the seal to last long term. Any advice?? Laying the aluminum trim against the brickmould (without tucking it in and relying on caulk to hold it) seems like a really sure way for the seal to fail in short order.
