What can I do with this botched partial soffit?

I had the soffits in my kitchen removed, but right at the end my "contractor" realized there was piping that would still protrude. They built a small box as a partial soffit but left it open when I expressed some uncertainty. This is the end result of the work, so I'm trying to see what my next option would be. As I see it, I can
1. Put drywall on the front and leave it a weird, hidden-by-the-cabinet, small soffit box that will get me questions when I sell.
2. Cut the soffit bottom and side to be smaller, have the soffit box follow the angled pipe so it's a triangle/fitted box instead of a square.
3. Hire a plumber to see if we can move the pipes? (That is an exterior wall and this is a condo, so this one felt least possible).
