Comments (13)Random Thoughts Thunk While Cooking: A cook is only as good as the ingredients and ingenuity used. What a nightmare. What a colossal nightmare. lol For the non-liver lovers, chicken would've been a good substitute, but did I get breasts or tenders. No. I got thighs because it reminded me of a dinner made by my Aunt Mary-on-the-farm when I was a child. I cleaned and cut for a very long time. The chicken livers were frozen, but, in the past, it's never been a problem. These things were just awful - all mashed up together (like someone took a meat pounder) to the point where I really had to hunt for the connective tissue. Just in case, going to a real butcher instead of taking a chance at the supermarket was supposed to not have this problem. Surprise. I can't even give him the benefit of the doubt and I tried. No self respecting cook would ever use this things in a sauce or a soup. I've cooked purchased, pre-cooked, bacon once before for BLTs but really didn't pay that much attention to it other than the fact it cooked quickly without grease everywhere. Last night, I really got a chance to eyeball it. When the box says to cook it til crispy, it really means to cook until dry. There's a difference. lol I didn't use it. So, prosciutto wouldn't be a good candidate for rumaki. Pancetta would, though. I didn't use pancetta because I wasn't quite sure how it would go with the marinade and other stuff I was making. Comments (11)I freeze extra cooked bacon all the time. Handy for salads, sandwiches, etc. Here's another idea that might work for Will's Blueberry Pancake kick... Make a bunch of the pancakes, all the same size. Cook the bacon. Cook half as many eggs as you have pancakes. Assemble pancake sandwiches (pancake, egg, bacon and top with a second pancake). Put each sandwich in a zipper bag and freeze. Reheat in the microwave on a plate. Eat as a sandwich or top with syrup. Not that hard to have a couple of weeks worth of fast breakfasts. Comments (12)Not my preference but many do it...like it Might want to try a simple toss in a 1/4 tsp in avocado oil or plain butter... I don't like oily veggies or beans. Need to find your family preference as some cook to death soft in bacon fat and we like them lightly blanched in water/or steamed quickly, then a simple lemon wedge...some fresh herbs. Crisp. Fresh still. Earthy. I put a lot of garden effort in fresh produce. I want my beans pure and near raw. As we like it...but some like veg cooked to death and fatted. A note to add...my peas and beans this season have been horrid and woody and nearly not edible unless a few shucked for tiny peas...(so few but good)... MILLION DOLLAR BACON Author: Cyd Converse Recipe type: Breakfast Serves: 12 Ingredients 1lb thick cut bacon 6 tablespoons brown sugar 1 teaspoon cayenne pepper 1 teaspoon cracked black pepper 1 teaspoon red pepper flakes Begin by preheating your oven to 350° and lining a baking sheet with parchment paper. (You can sub aluminum foil if you don’t have any parchment paper lying around.) Instructions Sprinkle the bacon with about half of the brown sugar. Sprinkle on the red pepper flakes, cayenne and cracked black pepper. Sprinkle the rest of the brown sugar on the top and then give it a good pat all over. Think of it as a rub that’s going to coat your bacon in candy-like goodness. You don’t really have to worry about coating the reverse side because as the bacon cooks, the sugary coating will run under it and coat the other side of the bacon, too.
