I did Travertine tiles in my master bath and went with Travertine countertop - I love it! It looks so uniform, pretty, and serene. It looks nice also because you have a counter of 4-5" over the wall tiles, and if the tiles and countertop are the same it kind of looks uniform and consistent. Here is a link that might be useful:

Your kitchen looks great, but I would also want to change out the counter and BS - I'm with you in hating tiled counters! But it's hard to give advice without knowing your tastes. There are so many different vibes you could emphasize... The current cabs/floor don't scream a particular style to me, so it's going to depend on what the rest of the house is like, and what you love... Modern? Farmhouse? Beachy? Formal? Urban casual? etc. For the sake of suggestion, I would take advantage of the open plan by lightening up the space - it looks like the cabinets are pale, though the second picture has them darker than the first - change out the paint for an ivory or creamy white color, pick a stone slab you love, maybe a pale sandy gold to pair with the new stainless, and a nifty old-fashioned flat subway tile in the same tone as the paint to tie into the 1929 era of the house. But really it depends on your preferences and the whole-house aesthetic.

I agree with @Mrs. S completely! We replaced our granite with quartz when we had our 2 level island cut down to a one level counter height. I also wanted to keep our backsplash on perimeter which also was mostly travertine & newer than the granite. I had already picked my countertops- Cambria Colton. My husband pointed out how silly it was to have spent so much time choosing a countertop & then not get the perfect BS to go with it since the BS was really the lesser cost item even considering the demo of current backsplash & drywall repair. I was also convinced by being told there was no guarantee the existing backsplash wouldn’t be damaged when removing the granite counter & it’s much easier to install new countertops without working around an already installed backsplash. BTW - I suggest you look at Cambria Colton. It’s a creamy, warm white & doesn’t have heavy veining but just enough to be interesting. The veining is soft black & a bit of brownish tones too.

OP - is that Cambria Windermere? It looks familiar because that's what I've chosen for my new build. They'll be paired with Merillat cabinets in the Glen Rock style with Kona stain (so dark).. A lot of time looking at the builder options and although I only had a 12x12 square to choose from this one caught both of our eyes. I got such an interesting feeling about that countertop because it has the warm white, maybe bordering on tan, with coppers grays and greens. I picked it because it had such a variety of feelings and tones that would pair well with a dark countertop and beige walls (SW Kilim Beige). We'll also have light wood styled LVP You said you have a lot of windows in that area so it's going to lighten up the countertop. We're also going to have a lot of Windows in that area so it's going to bring out the contrasts in the countertop.
