Comments (1)APPLE STUFFED PORK CHOPS Stuffing: 3/4 cup shelled walnuts 1 Tbs. butter or margarine 1/4 cup chopped onion 1 large apple, peeled, cored, and chopped 1/4 cup seedless raisins 1/2 tsp. salt 1/8 tsp. poultry seasoning 6 lean pork loin rib chops with pockets for stuffing, about 1 1/4 inches thick 2 Tbs. oil Salt & pepper 1 cup apple cider Gravy: 1 1/2 Tbs. flour 1/2 cup heavy or whipping cream (evaporated milk can be substituted) 1/4 tsp. salt Dash of pepper Stuffing: Preheat oven to 350 degrees. In small saucepan, cook walnuts in boiling water to cover for 3 minutes; drain. Arrange in pan and toast in oven until golden, about 5 to 10 minutes, shaking pan occasionally, and watching carefully for burning. When cool enough to handle, chop and set aside. (This step can be done the day before.) In skillet over medium heat, melt butter or margarine. Add onions and saute 5 minutes. Stir in walnuts, apple, raisins and seasonings. Stuff about 1/3 cup stuffing into each chop and secure opening with wooden toothpick. Heat oil in skillet and brown chops on each side; place in single layer in baking dish or pan. Season with salt and pepper. Pour in cider, cover and bake for 45 minutes. Remove lid or foil and bake 15 minutes longer. Transfer chops to a heated serving dish and keep warm. Gravy: Put flour in a small saucepan. Gradually strain baking juices into saucepan and blend with flour. Cook over medium heat until smooth and bubbly. Add remaining gravy ingredients. Comments (31)My favorite is still the good old Cooking Light apple cider brined pork loin recipe. Maybe the brining would help with the aftertaste? I can't help you on that, I never noticed that pork had an aftertaste, although fatty cuts of beef do, it's that "tallow" taste and the grease slick it leaves on the inside of your mouth. Pork is pretty lean anymore, though, so I don't think that's it... Anyway, compliments of Cooking Light: APPLE CIDER BRINED PORK ROAST 3 cups apple cider 3 cups water 1 bay leaf 1/4 cup salt 1 tbls black peppercorns 1 tbls coriander seeds 1 2 lb. Pork loin, trimmed 2 cups cider 1 1/2 tsp chopped fresh rosemary 1 1/2 tsp chopped fresh sage 1/8 tsp freshly ground black pepper Combine the first 6 ingredients in a saucepan and bring to a boil, stirring until salt dissolves. Remove from heat, cool, and pour into a Ziploc bag or container big enough to hold the pork loin. Add pork, seal and let marinate 8 hours or overnight. Preheat oven to 350, bring 2 cups cider to a boil over medium high heat. Boil until cider is thickened and reduced to ü cup, about 15 minutes. Set aside. Remove pork from bag or container and discard brine. Place pork on broiler pan or baking dish and lightly coat with cooking spray. Sprinkle with remaining herbs and bake about 1 hour, until pork is done, basting twice with the reduced cider in the last 20 minutes of baking. Remove from oven, baste with remaining cider reduction. I was about to ask how the kids tasted, and what sort of sauce you used. :>) Which reminds me, I haven't posted this in awhile: To Preserve Children 1 large grassy field 2 or 3 small dogs Some pebbles A pinch of brook 1/2 dozen children Mix the children and dogs together well. Put them in the fild, stirring constantly. Pour the brook over the pebbles. Sprinke the field with flowers under a deep blue sky. When brown, set in a bubble bath to cool. Now, on to the barbecue. Years back, Craig Claiborne adapted a Tennessee pig roast to the backyard grill, using Boston butts. You understand that with pigs, part of the shoulder is called a butt, but the actual butt is called a ham. Don't ask me; I don't make these rules. You can use either the shoulder, the butt, or the whole piece as you will. Either way, slow cook them, using indirect heat, and baste occasionally with Tennessee mopping sauce. This can take as much as 24 hours, but 8-12 usually brings the pork to the falling apart stage. Tennessee Mopping Sauce 1 cup brown sugar, packed 1 1/2 tsp onion salt 1/2 tsp paprika 1/2 tsp salt 1/2 tsp pepper Dash garlic salt 2 cups vinegar 1 cup bottled barbecue sause 1/2 cup catsup 2 tbls Worchestershire sauce 1 tbls hot pepper sauce In a saucepan stir together the brown sugar, onion salt, paprika, salt, pepper, and garlic salt. Combine vinegar, barbecue sauce, catsup, Worchestersire, and hot pepper sauce. Stir vinegar mixture into dry ingredients. Cook, stirring, over low heat until sugar dissolves. Remove from heat; cool. Comments (8)Darn, I got impatient and just took a guess, though I should've waited for your good advice bc I don't think this'll be ready for tonights dinner anyway. lwo, thanks! I bet a smoker would make it perfect. I don't have one though, and I'm not trying to win any contests tonight just feed hungry mouths! And most recipes I found online said to use a dutch oven & said nothing about a rack. I just got this new pot & wanted to try it out. I ended up searing it, pouring some apple cider vinegar and 1/2 a beer over it, choosing "convection roast" on 275, and now its def sitting in all its fat slowly roasting away. I guess itll be fatty but it does smell good! Next time I'll do a rack on a sheet pan. So you don't cover it when you do that? My real question that I need to explore is what the difference is between all those settings on my Bosch oven... topic for another thread or someday finding the time & desire to sit down with the oven manual... thanks!...See MoreSuzieque
