Great Summer Dessert

A friend sent me a little Scottish cookbook and in it was a recipe for Tangy Lemon Posset. I've seen recipes for posset but have never made nor even tasted it. I made it yesterday and it is amazing! A cool refreshing summer dessert (providing you like lemon) and much lighter feeling than ice cream.



And it's so simple to make:


Take 2 cups of cream, 3/4 c. sugar and zests of 4 lemons. Put in a BIG saucepan and bring to a boil and let boil 5 minutes. A big saucepan because it will boil over if you don't. Stir occasionally. After 5 minutes, take off the heat and let it cool for a bit. Then strain the mixture (so you get out the lemon zest) and then let cool some more. Put a few berries (I used black but you could use raspberries or blueberries) in the bottom of a parfait or wine glass, pour in the posset and refrigerate for at least 4 hours (it will firm up). To serve, leave out about 5 minutes before serving and top with some more berries (and a lemon verbena or lemon balm leaf is a nice touch).
