I'd pour the measurements I'd used (in my case, 1/2 C for the one cake recipe I use that needs buttermilk) into a zip lock bag, date and freeze it. Not forever, but good for about 4 months anyway....

I have a friend who happily drinks it. Neither of us do.

I would freeze it in recipe sized portions

You can use it to make Ranch salad dressing, but I normally use it to make waffles, which I think are significantly different from pancakes.

Besides biscuits I use buttermilk in pancakes and as a marinade for chicken thighs. I use lots of smoked Spanish paprika in the marinade. The chicken turns out crisp and delicious!

I use it for frying chicken, biscuits, pancakes, waffles, and dumplings when I make chicken and dumplings. I also use it sometimes when I have it and want to use it up to make cornbread for chicken and dressing. I always keep it on hand.

I use milk with added vineagar as a sub for buttermilk i could never drink it! You could go on allrecipes and type in buttermilk as an ingedient to search for and see what what comes up

We use buttermilk all the time. Today i am making okra ”oven fried”. Always use a little buttermilk so the cornmeal will adhere and crispy. Making biscuits with buttermilk. Love buttermilk. You have wonderful suggestions from postings.

Coco, I looked at that recipe....that was very interesting. I am going to try that....cutting in the butter (sometimes I grate it) is how I usually do it, but I would gladly skip that part if I didn't have to do it. Only down fall I see about it....I would probably make biscuits a lot more often.

Soak chicken pieces, bread then bake. I never buy buttermilk, I use 2/3 cup yogurt with 1/3 cup milk and use it in me pancakes, biscuits, bran muffins etc.

Leftover buttermilk? What's that? I buy buttermilk for biscuits, pancakes, chicken and cake. And have been known to have to make a trip to the store on the day I want to use it, because I've drank it all. I love the stuff! Especially icy cold and maybe a dash of pepper added to it.

All great suggestions you have been given, and yes, you can freeze buttermilk. I usually buy quart size as I dont use it much and still end up freezing some.

I too only "make" buttermilk for what I'm cooking. Vinegar and milk.

I figured out the cost of a container wasn't justified. I hate waste.

Marilyn, until finding that recipe I pretty much avoided making biscuits. I have no problem making bread, but biscuits and pie crust I've never been real successful at. I love how easy it is to mix the biscuit dough. Chris has a couple other versions on her blog. The first one I tried was the Rosemary & Parmesan. Dh loved those too.

Buttermilk also lasts a long time in the fridge I've used stuff over a month out of date and it's fine.

But what you should really make is Buttermilk Pie. I only discovered it a few years ago since I'm not from the south but it should be popular everywhere.

Yes, freezing it works great. I used to freeze it in ice cube trays then transfer to freezer bags. Around here t's really hard tp find buttermilk in containers smaller than a quart. Wish they sold it in pints.

Buttermilk chicken! Put some Franks hot sauce in it then marinade your chicken pieces in it. I usually use boneless breasts but full bone parts are good too. Let soak all day or overnight. When you're ready to cook, remove from milk and dredge in flour then pan fry in oil. Or deep fry.

Agree with 2 things - it lasts a lot longer (like, weeks) in the fridge than the expiration date would suggest, and it freezes very well. I use it in baking cookies and cakes sometimes, instead of my usual substitutes for the fat or oil in the directions (which are applesauce, low or non-fat sour cream, or other pureed fruit)

@glenda smith, I like buttermilk pie, too. Ate a piece in a restaurant in Arkansas many moons ago that was sooo good. Have tried making it a few times but it never comes out as good as I remember that pie tasting. Still good, though.

We buy powdered buttermilk. It is dry and comes in a pint sized container that we keep pretty much indefinitely in the fridge. Oddly enough the dried stuff is real buttermilk- dried leftovers from butter making while the liquid is a cultured product similar to yogurt but with different bacteria. They use more than one kind as I recall. I dont think they taste different in cooking. I suppose you could reconstitute and drink it. I am not a fan but my dad was.

Whether you put it into a toilet or pour it down a sink - any sink in the house - it will wind up in the same place.

Conventional wisdom is that septic tanks should need no supplemental additives to work. Normal food and human waste that go down a house's sewage pipes should supply everything needed. What they do need is to be pumped out regularly - the frequency depends on the size of the tank and number of people in the household- to remove the build up of indigestible materials.

I only buy powdered buttermilk, and I store that in the refrigerator. I also buy powdered regular milk (Nestlé brand), and I have some powdered cream that I have not used yet. I never use enough of these products to justify buying them fresh, and I especially like the powdered milk, which is infinitely better than powdered milk from the 1970s and earlier.

If you buy powdered buttermilk, you won't have to worry about leftover milk.

I have powdered buttermilk in the frig that I never remember to use. Darn! I would have used it on my chicken today, instead of using up my yogurt. What are the directions to using the dry?

If my dad were here, alive and nearby I'd just give it to him to drink. He loved it. I can't imagine drinking it, although, I do now like Greek yogurt and bleu cheese where when I was younger I didn't.

I ended up making Zalco's summer cake. Thank you for the recipe! I did cut down on the sugar a little bit. My exchange student ate two huge pieces of it, which is good because no way could I finish it all off myself. He leaves in two days so I'm taking a couple slices to my daughter tomorrow.

I'll probably freeze the rest of the buttermilk to make something else later, like some fried chicken wings. Thanks for all the suggestions.

Jasdip, it might depend on the brand, but they're likely all similar. I used to buy Saco Powdered Buttermilk. You could just look up the instructions online for whatever brand you have.

I bought mine from the bulk store. I don't know how to use it. Is there an approximate ratio of powder to milk or whatever liquid you use?

Oh, okay. This is from Saco. I'm guessing it's close enough. You can use this as a guide to increase or decrease the amount of buttermilk you need.
