Bad Quartzite seam install?

A stone countertop "professional" came and installed a countertop with what looks like to me two very noticeable and unacceptable seams on my kitchen counter. What are my options here? He has not been payed in full yet. I can clearly feel and see the seam line and there are two of them on each side of the sink.

He almost installed a completely different slab in another section of our kitchen so it was decided that he would come back and finish the backsplash and that other section (This is why the kitchen looks torn up).

Any advice is welcome!

I agree that the line-up of the stones is good but the contractor/fabricator never even asked if i wanted one big slab which i wanted and expected and instead brought 3 different slabs and now the seams are clearly visible even more so in person. Thank you for any and all input!
