Enchilada casserole with black beans on the side. Everything is iced over and the transformer next door keeps exploding. I hope our power stays through the night. Nothing worse than being cold.

Spaghetti and applesauce

I bought a rotis chicken from costco several days ago, so after chipping away at it, it was time to make soup...came out good! Will get a few days out of it as soup too. Such a deal!

Beef stew, dinner rolls. My BIL cooked and made porch deliveries today (to 4 households). He'd warned me of his plan yesterday when I was going to cook a pot roast....beef, carrots, onions, celery and with leftovers for tonight. We had a simple alfredo sauce with pasta instead, knowing he was bringing a similar dinner to pot roast today. Oh, he brought a berry pie too, Costco frozen berries put to use.

Roast pork, white rice topped with homemade black beans. Hubby had his roast pork, onions, hot sauce on a toasted pita.

Chicken and dumplings. I make the Bisquick fluffy dumplings just like mom made. It’s 19 degrees at 5:15 pm and this should last for 2-3 days.

I had a crab cake from Whole Foods and it was too spicy for me. Also broccoli.

I went out to run some errands and swing by the grocery before our threatened snowstorm hits tomorrow. Rib steaks were on sale, so I picked one up. It wasn't on my list although the asparagus I will have with it was. Tomorrow I am making spinach and sausage stuffed shells.

Leftover pasta with feta and tomatoes.

I went to a small neighborhood pizza place and got an individual white pizza and some wings. I had that tonight and will finish it tomorrow.

Safeway $5 deal = 8 pieces of fried chicken, a dozen white rolls from the bakery, 2 ltr diet coke, bag of shredded lettuce/salad makings

I went to Lufkin to stock up on horse feed so I wouldn't have to go out until after it warms up next week, and I brought a pizza back. I had put a chuck roast in the crockpot, and it is done but neither of us feel like eating. Except I had a blueberry muffin, and Jody ate about 3 bites of the chuck roast. I'll do something with it tomorrow...maybe even feed it to the cats.

It was cold and rainy today. I made taco soup and it was yummy.

Baked a couple frozen strombolis and made french fries for my son and myself

Today I made homemade chicken and dumplings. It was so good. I haven't made it in a long time.

I also bought groceries to make chicken and sausage Okra gumbo

Ribs for the oven. And chili.

The plan for tonight is lightly sauteed ham, cheese grits, sweet potato or grilled pineapple, and Brussels sprouts. Edited to add picture of my meal. Did decide to have sweet potato and not the grilled pineapple and could not find the grits so did polenta. Truly a good meal, but I could eat only half of it and only about 1/3 of the polenta.

Tomorrow will be Jacques Pepin's Crusty Chicken Thighs, a new to me recipe for garlic fried rice noodles & salad.

No idea since it's way too early for my dinner. I do know I need to add more fruit and veggies today so I will most likely build around that. Had a steak and cheese on brioche for my lunch just awhile ago so will probably have a pork chop for tonight's protein. Probably have a salad and pineapple with my chop if I do it teriyaki style or applesauce with it if I just pan fry it plain. I am basically grazing today.

Just had a bowl of chicken, tasso and Okra gumbo. Prefect for this cold weather.

I had popcorn with a lot of butter.
