Backsplash / Crown / Bay Window Dilemma

Help, Help. We are progressing nicely on our kitchen remodel but have hit a dilemma with our sink wall. The original plan was to run subway tile (fez wow) all the way to the top (crown) and around the bay window. No tile on the walls adjacent to it. There is a similar space on the opposite wall but with shelves between uppers, where the plan was the same, tile all the way up. My wife loved the idea of a big wall of subway tile when we started planning the kitchen, but we have decided to err on the side of practical as any changes have come up

Unfortunately there was a miscommunication and the crown on that wall was installed without spacers for the tile and will need to be redone in those locations, however now we are re-evaluating whether we want/should run the tile as we originally intended. Removing the crown, then installing the tile, then the crown back on top is an option, but we are wondering now if we just run the tile to the bottom of the upper shelf, so ~20” below the crown. We could also run the tile all the way up and remove the crown on the wall as it seems like that may be an even more popular look (based on the examples I can find).

Looking for some input from the pro’s here to balance out our thoughts as well as what our KD thinks (talking tomorrow). Wondering what the pros and cons are for tile all the way + crown, tile all the way no crown, or tile 2/3 or so up the wall, ending below the top shelf. Thanks in advance.
