Comments (13)Juliann, I haven't tried freezing the barbequed chicken because we eat it all up each time I make it :) I don't see any reason why it wouldn't work. Depending on when I need my meal is how I choose Low or High power to cook the chicken. I use Low for about 4-5 hours (like before going to church in the A.M. to have an early afternoon meal) or on High for 8-10 hours to cook all day while I am busy with the kiddos. The crockpot is very forgiving just check it to see if it's done, if not continue cooking. If it is done earlier than you are it can stay there safely until you are ready. Comments (1)I love soup too! Here is a variation of the one you posted above. I made it just the other day and it was awesome. I will definitely try yours next. Alexa Crockpot Chicken Tortilla Soup Place in crockpot 2 or 3 boneless, skinless chicken breast halves. Without draining anything, combine in bowl: 2 (15oz) cans black beans 1 (14.5 oz) can tomato sauce 2 (15 oz) cans Mexican stewed tomatoes (or Rotel) 1 (4 oz) can chopped green chilies 1 cup salsa, your preference as to strength Pour over chicken and cook on low 8 hours. Just before serving, remove chicken, shred it, and stir it back into the soup. Stir in: 1 can Niblets corn Heat just long enough to get corn and chicken hot. Serve topped with cheese, sour cream, and crushed tortilla chips. Or put the chips in the bowl first and ladle soup on top. Comments (31)I use a really lean roast and cut off the fat before I make it. The beauty of this recipe is that you don't have to use the stove! I usually pour off a lot of the cooking liquid before I serve the beef. Rather than cook the meat before hand (which you could easily do), you could cook everything in the crockpot and refridgerate it over night and then skim off the solidified fat.
