Which would you choose? Bridge v. pull-down kitchen faucet

I'm building a new home and debating what type of faucet to buy for the kitchen -- traditional bridge or more contemporary pull-down. The rest of the home's plumbing fixtures are more traditional, and will be in Polished Nickel finish (see bath faucet link below for context).

Aesthetically, I much prefer the look of a bridge in the kitchen. Functionally, however, I worry about:

  1. the annoyance of having to use both hot and cold handles (i.e., no mixing valve)
  2. the inconvenience of having a separate side spray, which presumably has less power/water pressure(?), rather than the pull down (I do a lot of cooking and am in the kitchen often)
  3. what determines the water temperature of the side spray? Can you adjust the temp and, if so, how?
