Comments (9)Without the actual name of the recipe or at least the page number I can't find exactly what recipe you are talking about so I am going to assume it is the Hot Pickle Mix one on pg. 50 in the newest edition? Could really use that info in the future. ;) Otherwise, since these are all low-acid vegetables, I'd keep all the other veggies to the same amounts called for in the recipe and just use the peppers you have. Without computing the pH differences in all of them there is no way to know what affect changing the amounts would have on the pH. If that is the correct recipe then yes, you can add more of the carrots or cauliflower (I wouldn't add cukes as they will dilute the vinegar because of all the water they contain) as long as you keep the total amounts of vegetables the same since that recipe has ample vinegar in it (10 cups). Comments (16)In preparing for winter, I got out my hot chocolate/hot cocoa mixes and ingredients. I found 1/2 box of Godiva Dark Chocolate Truffle Hot Cocoa, 1/2 box Ghiradelli Hot Chocolate mix, and The Fresh Market Hot Cocoa mix. I thought this would be a good time to taste test. To my surprise, the less expensive TFM was a little bit better. I combined all three into a large Mason jar. This winter I have been heating half & half, milk, a TJ's truffle, then adding the combined mixes to the hot milk. Add marshmallow fluff. Wow, now that's a low cal breakfast drink. I don't know who to credit with this recipe, but it's good. I have been making half batches: Hot Cocoa Mix Makes about 20 servings 3 cups nonfat dry milk 2 cups confectioners' sugar 1 1/2 cups Dutch-processed cocoa powder 1 1/2 cups white chocolate chips 1/4 teaspoon salt Combine ingredients in large bowl. Working in two batches, pulse ingredients in food processor until chocolate is finely ground. Store in airtight container for up to 3 months. Comments (3)The reason for the added cocoa is the reduced size of the nestles quick container. Originally, the recipe called for the 32oz, 2 pounds. My hubby, the math genius, did some kind of fancy math figuring and came up with about 1/3 cup was missing from the container that was 30oz. There wasn't any way to figure out the preportions of what is in the nestles quick so my daughter said to just toss in 1/3 cup of unsweetened cocoa and see how it turns out, since trying to reduce everything else might not work. So I just tossed in the unsweetened hersheys cocoa and have been doing it ever since. It does taste a little richer than it used to, actually a little more chocolate taste too.
