RECIPE: Best Home Made Hot Cocoa Mix

This recipe for hot cocoa mix was given to me years ago when my kids where little. They still love it and it's so easy to make. Just mix the ingredients and store in an airtight container. it makes 46 10 ounce cups of cocoa and best of all, you mix it in hot water.

I'd send it off with the kids after their winter college break and they loved having it.

Be sure to use the name brand products when making the mix.

I have tried the store brands to make the cocoa and it doesn't taste very good

HOME MADE HOT COCOA MIX

makes 46 cups of cocoa using 1/3 cup in 10 ounces of hot water

1 30 ounce box of nestles quick powder

1 16 ounce jar of cremora

1 pound confectioners sugar sifted into the mix.

5 1 qt envelopes of carnation powdered milk

3/4 cup of unsweetened cocoa

In about a 10 qt pot (that is what I use, an old soup pot), sift the confectioners sugar, (you must sift the sugar or you will have lumps of it in the mix). Add all the other indredients and mix untill all is blended together well.

store in airtight container.

to serve.

measure desired amount of mix and put in cup. Add hot water and stir well. add whipped cream, marshmallow, cinnamon or what ever you like and serve. We us 10oz mugs and add 1/3 cup of cocoa mix.

I thought I had posted on this yesterday, but I must have deleted it before it got printed!

Thanks for this recipe - I like to take something when we visit the granddaughters and their mom is always baking, so I prefer to bring something that I know they don't make themselves. This sounds like just the thing!

Used to make this a lot except for the added cocoa hmmm may need to try again...bet that makes it a bit more dense

If I'm making the basic cake (white, yellow, chocolate, etc.) I always sift the powder mix first. I use applesauce instead of oil and I always add vanilla no matter what flavor cake I'm making. If I use the whole egg (I usually use the whites only), I beat the whites separately from the yolk before adding anything else. I've been told that my cakes have the texture of wedding cakes. Now as for variations I have added peanut butter and chocolate (a personal favorite) to a white cake, sour cream to a chocolate cake, strawberries to a white cake (omit water) and I am currently making pumpkin bars from a spice cake mix (which led me to your site because I was looking for a way to turn a white cake into a spice cake so I can double it). Use four eggs instead of three, add a can of pumpkin and a quarter of a cup of applesauce (or oil if you prefer), omit water. Bake as directed on the box.

publickman, thanks for the mention that Pernigotti can still be purchased! I don't know why I never thought to search on Amazon.com for it, but I just did and have ordered it from chefshop.com through Amazon's Marketplace. It is NOT eligible for Prime membership's free 2-day shipping, but if you're registered at Amazon it's a one-click to order it...so convenient! Oh boy, my Black Bottom Cupcakes are going to be soooooo good again with this stuff. They're good anyway, but with the Pernigotti they jump up a whole level higher. Scharffenberger's cocoa is okay but Valhrona is better. But I like the Pernigotti best of all.

I love my BtoB Cocoa Maker. I bought mine in Jan '07 so I've had it not quite a year now. It was recommended by someone on this list and I thought I could pick it up on sale after the Holidays but no such luck. I only use it during the cold months and maybe 4-5 times a month and I've not had any problems with mine. I like it because of the automatic heater which heats to a perfect temperature. And when the liquid cools it will automatically heat again. And the foam feature is great! Like Diane, I am not one for 1-purpose appliances, but the BtoB Cocoa Maker is one I am glad I own. I read some of the negative comments at Amazon.com and it seems to me the problem is using too much mix so it settles on the bottom and if you do not clean this it dry and be a sticky mess. But this can happen in a sauce pan too. For St. Patrick's Day I made white hot chocolate tinted green and added brandy and I had no problem at all cleaning the machine. I've seen some others out on the market this year but have not heard anything about them yet. Michelle

Hi Westelle, here's the one that I've tried and liked. We used the Milkman powdered milk, I believe it is low-fat rather than non-fat so it gives a nice consistency. I think I'll make it again this season. :-) Hot Chocolate Mix * 3 C powdered milk * 1/2 C cocoa * 3/4 C sugar * Dash of salt Sift the ingredients into a large bowl. Pack the mix into an airtight container or jar. Attach the instructions to the jar. Instructions for making a cup of Hot Chocolate: * 4 Tbsp. Hot Chocolate Mix (from jar) * 8 ounces boiling water * Marshmallows or whipped cream (optional) Place the Hot Chocolate Mix into a 12 oz. mug. Pour a little boiling water into the bottom; stir until the Chocolate Mix is completely dissolved. Fill the mug with remaining boiling water and stir well. Garnish with marshmallows or whipped cream. The reason for the added cocoa is the reduced size of the nestles quick container. Originally, the recipe called for the 32oz, 2 pounds. My hubby, the math genius, did some kind of fancy math figuring and came up with about 1/3 cup was missing from the container that was 30oz.
There wasn't any way to figure out the preportions of what is in the nestles quick so my daughter said to just toss in 1/3 cup of unsweetened cocoa and see how it turns out, since trying to reduce everything else might not work.
So I just tossed in the unsweetened hersheys cocoa and have been doing it ever since.
It does taste a little richer than it used to, actually a little more chocolate taste too.

Just wish these manufacturers would stop changing sizes on us. It's hard to use old recipes when they change the size of containers.
