Totally agree with LALA ... with your mantle being so wide and close to the ceiling, I think a layered look would be perfect. You could even incorporate the two white pieces in your picture with the vignette. I like a mirror being the focal point (as in LALA’s first pic), but here are some other looks below. If you a search for ‘layered fireplace mantle’, lots of good inspiration comes up. Basically, with so much horizontal shapes in there, you’ll want varying heights of things for the most interesting look.

I think if it was me I’d try to suspend from the center of the window “box” a not-too-wide panel of stained glass or clear beveled glass with a nice design, and then add a beautiful tallish live plant to one side, which a florist could help you pick. I would probably look for a local glass artist to get the measurement just right, but I might pick a design as simple as this, maybe all clear glass Or I might ask the artist to create something unique with more color, and mor elaborate Looking at your window, a shape I would consider is a longish elliptical oval, rather eye-shaped, hung in the middle. But I think a rectangle panel might work best. Maybe with an orchid plant! Something else I would consider is a beautiful small tree — like a fig or olive, and maybe even a fruit tree like orange or pomegranate— but I would get a florist to help me find a live one Finally, not all mobiles are for babies but it would be introducing a very modern element into the room that might just not fit without rejiggering the rest of the decor, and the nicest big ones aren’t cheap!
