Recessed lighting: 8 inch too big? Sloped ceilings?

We would like to install recessed lighting throughout our house, including one room with vaulted, sloped ceilings. We'd like the lights to be as bright as possible (with the option of dimming if they're too bright). The room with the vaulted sloped ceilings is our home office, and we especially need good lighting in there. From what I can tell, very high lumen (100 to 150 watt equivalent) LED recessed lighting seems to only come in 8 inch sizes. However, it seems people generally use 4 inch or 6 inch lights in their houses.

1. Is there any downside to using 8 inch lights for general interior residential lighting? Considering these:

2. What type of LED recessed lights should we use for the sloped ceilings? From what I read, gimbals are not ideal.
