you can do any type of shape or pattern, and pretty much any color.

I saw this display at a local store, and was intrigued with the glass tile.

it's a little plain, but yes, the gray glass tile could work.

I wouldn't use a 3x6 size though. go w/a 2x8, 3x9, 2x10, 3x12. it looks better.

And since you have all solids, why not think about a herringbone layout, or a stacked layout?

This is calacatta marble in a chevron. looks like a 2x12. But even this in a herringbone would be stunning in your kitchen.

I do like that insert over the sink in the photo you posted. I haven't seen a 'niche' over a kitchen sink like that. Kind of a cool idea since you don't have a window. you can keep your countertop clear of soap dispensers or whatever.

Your tile guy may be able to make one for you.

This is the perfect opportunity to do anything you like! What is your style? What other furnishings will you have in the adjacent room? Do you like color? I agree, anything but plain white subway tile here.

I appreciate all the input and advice! I have been drawn to modern farmhouse style overall. In terms of color, muted or gray colors suit me best.
