Sure you can. Just be prepared for a large labor bill. No matter what the material, that's a lot of custom cutting. A design like that has be carefully laid out because imperfections or imbalances will jump out to the eye. As for authenticity, there's a whole lot of LVT being laid in commercial applications I've seen that the average person honestly CAN'T tell from stone and wood. We were in a big retail store and my spouse commented how stunning the dark green marble floors were. I looked down and said, "This is beautiful, but it's vinyl, not marble." Every year companies are getting closer and closer to making a counter that is a true marble look-alike. In 2003 we looked at stone-look flooring for our kitchen. The sheet vinyl was fake looking, but the solid vinyl tiles - Amtico and Metroflor - were quite nice. We picked Metroflor and have been extremely happy with it. Quiet, comfortable underfoot, never cold, and ridiculously easy to care for. Fast-forward to 2014. We needed to redo a small bathroom tile floor. I was shocked at how realistic the sheet vinyl stone-looks had become. It was a HUGE improvement in coloration. We put in an Armstrong sheet vinyl slate-look; looks great running up against our 1940's wide-plank oak flooring.

I just saw it in a showroom. I love the Ardmore color but I can’t find much information about the product. I think I still want to go with an SPC product but the Tas Ardmore is tempting.

Vinyl products do NOT like anything soft/squishy underneath them. In fact they can separate or break their own edges if you have underpadding underneath. If the Pergo vinyl has an attached underlayment, then it is DEFINITELY NOT allowed to add anything else. This is NORMAL for vinyl. In fact it is a major drawback for all vinyl products. Underpadding is not allowed with 99.9% of vinyl floating/glue down/perimeter glue products. The installation instructions will tell you what is ALLOWED to be used. If it is listed then it is allowed. If you do NOT see it listed, then it is NOT allowed. It is an easy rule to follow. Continue with the rigid underlayment (like you did in the bathroom). The noise reduction from the attached underlayment is the only padding/accustic insulation you are going to get.
