Remodel dilemma...Filling 7" of space at end of 72" alcove bath/shower

My contractor is really not being helpful and need advice here. Using ceramic subway tile 4"x16" size, 1/8" grout. We have 72" soak alcove tub/shower and the wall it's going on is 79" so we have extra fill-in space. Tub is 22" high. Shower head is on opposite end of wall where they want to do the fill-in space.

How high would you go in the fill in space above tub? If subway tiles are 4" high I was thinking maybe going up 12" from the tub, so it's 3 tiles (or perhaps doing 8" and 2 tiles). Does that sound right or would you go higher? Also, is it odd to use subway tile for a large area like when it will have grout on it? I could reduce the grout to less than 1/8" but not sure if that is advisable. I am worried it will get mold, even if it's sloping down for water to go back in tub. Note, there's a 24" floating vanity that will be going next to the side of the tub. Frameless shower door is planned to enclosure the shower/tub area. (see planned bathroom layout above).

Any design advice would be helpful on this remodel dilemma.
