So many great ideas! I would leave the beams and Sea Salt is gorgeous but try it out in your space since it reads green, blue, or grey depending on lighting. I loved it in a bathroom but it went an awful shade in a master bedroom. Tryout samples in your space and if Sea Salt isn’t what you want talk to the Sherwin Williams person and tell them exactly what you like and don’t like about it, ie it went too green, too muddy, too dim and the more information you give them they can point you in the direction of the perfect color. My Sherwin Williams has been awesome for nailing it every time, including on Sea Salt for the bathroom.

I would want to avoid paint, because that would look too much like.... paint..... ie an acrylic plastic layer concealing natural wood grain. What about something in between, like... Sanding, but only to get finish coats to adhere better, you're not needing to get off every bit of poly. Experimment with a heavy bodied white stain, wiping it back strategically to get some grain showing through. Some of these come in light greys or beiges meant to simulate bleached wood and the heavy bodied ones sit on the surface more. You dont want a penetrating stain, one thats made to go down deeper into the pores of the wood, because then youd have to be sure you got off every bit of polyurethane so that the stain soaks in evenly. I can't fathom applying bleach overhead. It works by soaking in the wood and sitting a while - how can that happen if its falling down into your face. It's thing called gravity - it's really a nuisance sometimes LOL.

I can definitely see the green; it's super-obvious in the living room pics on my monitor. I have no advice how to fix it in terms of product/application, but I do suggest that you choose a dark brown color or, even better, a dark reddish-brown to coordinate with the cabinets. For just brown-browns, have you looked at Provencial, Special Walnut, or Dark Walnut? ETA: BTW, I feel your pain on the orange. All my window frames and some of my interior doors were stained in some sort of orange-ish shade by the previous owner, and I'm in the process of changing things. I have no idea if the painter is going to be able to re-stain; if not, I'm just going to have him paint over them -- dark brown paint is better than orange stain in my book.
