what kind of chairs should I get here?

Kitchen and dining room are attached and want to define the space but also coordinate. Don’t want something too heavy either. Like modern, Funky a little bohemian... comfy, kid friendly and to coordinate with the space since all open. Some point down the road will
Paint the cabinets. Just got the acrylic counter stools and don’t want to repeat the acrylic at the table

ETA... while the table is new, I *may* return it. Any other suggestions for what type of table-- again, didn't want more wood and want to downplay the darker color of the cabinets. Thanks!

I like the chairs have style wise but honestly get a little color in the space those chairs you have come in tons of colors.

What kind of blinds should I get for my windows with little depth?

It sounds like you may be mounting the blinds in the improper location. The depth should be the same at the top and bottom of the opening unless the blinds are being mounted in the actual "window" portion of the opening. The blinds are not supposed to be mounted in the area where the window slides up. They are to be mounted in front of that. The photos are hard to tell what the depth is like but if the mounting depth shallow, you may want to consider doing an outside mount, meaning the blind/shade would mount on the trim work.

What kind of couch/color couch should I get?

That TV is so high up that I think you'll find it very uncomfortable. Ideally, you should be able to look at the TV straight on without tilting your head up or down (otherwise, you can cause major neck issues down the road). Would you be open to putting your TV where that mirrored cabinet currently is? That way, you could lay out your couch and chairs basically the same way it's done in these photos above.

I haven’t decided on a dish set yet, I was thinking a cream for everyday use and I also have my grandmothers dishes that are retro and gold rimmed with green bamboo for when guests are over.

Thx- these are my old chairs from my old house and they are just temporary.. I was thinking more open back and trying to find something more funky- but still will withstand messy kids and a husband lol while being comfortable.

Cant see the whole knee wall but maybe a banquette there for dining seating and space it from the kitchen cabinet wi a bookcase etc. pillows for colors
Add a rug to define dining area and to give color and put something on the table

Try experimenting with chair covers To add colour without investing in new furniture. You can get an inexpensive set from Amazon($30-40).

If your kids are young, maybe just keep these for now. They seem easy to clean. Add some color with a rug maybe? Or runners? Or both (coordinating but not exactly the same). FWIW, I think your cabinets look nice and don't need painting.

Thx all-- we were going to build a banquet-- originally there was more cabinetry there, and we pulled it out as it was just overkill and not needed. We decided to hold off on the banquet in case we hated it. We just moved in and wanted to live the space first. My kids are not that young (8 and 11), but are slobs with greasy finger prints everywhere and occasional spills, so something that I am not going to be stressed about is best. I just want to stay away from wood, and they like something soft to sit on, and I like something wipe-able.
