Comments (4)The 36" NXR is available from Costco online and a number of vendors for $2999, delivered to your curb or garage. There are numbers of very detailed threads here about NXR stoves. Most posters have the 30" models ($1999 delivered.) The difference between the 30" and 36" stoves is basically size: the 36" is wider, so it has two more burners and a bigger oven, as you would expect. The 36" can be had with four burners and a griddle or six burners. (Several of us NXR owners have commented that it would be far better to get the six burner model and buy a large carbon steel griddle which you use when you want one and remove when you do not. (Chef-King is brand most often recommended in the threads here.) For a view of an installed 36" NXR see Alex Nerland's write up from Fine Homebuilding on a kitchen remodel in a Victorian house. The link is below. The NXR uses dual-stacked (two ring) sealed Isphording burners. Same maker as those used on Wolf dual-fuel stoves and, I think, DCS ranges The burners sit in wells deeper than on major maker stoves, so spills rarely bake on. In turn, that makes the top far easier to clean than is common with major brand stoves. Wokking? How wok-centric (or snobby) are you? If you are somebody who wants restaurant-style wokking, then many of us would say you should get a 50k propane-fired turkey frying stand and wok-out in the back yard. Comments (59)I wanted to contribute my experience- we got the capital culinarian all gas 48" w/ the griddle (so we have 6 burners) within the past year and I have been using it for a few months. I LOVE LOVE LOVE our decision!! I too did a lot of research and did not read many negative reviews about it- and they are very well built, pretty, and simple design-wise (my husband is a contractor and thought they were most similar to the commercial ranges he has worked on, i.e. if something breaks it would be easy to fix). I probably wouldn't need 6 burners just for cooking- but it is nice to have. I also do a lot of canning/preserving, and do use 6 burners at the same time (simmer for warming lids, canning pot, pot for extra hot water, pot w/ stuff to be canned, pot w/ syrup for the stuff to be canned, one pot w/ dinner cooking). My husband loves the griddle- very easy to make breakfasts, hot sandwiches, etc. You could always do 4 burners and a grill/griddle as an option if you don't can/need 6 burners. Also, I really enjoy the big oven on the 48" (not sure how this compares in size to the 36" since the 48" has a large and small oven and the 36" one large oven). It can fit 9x13" pans side by side, and cookie sheets. The roll out racks aren't as smooth as some of the other brands we looked at (we liked the thermador racks the best- very smooth) but they work pretty well. Also, I haven't had any problems w/ the baking heat/evenness, and our oven is gas (which I think is typically worse than electric ovens?). I haven't baked bread yet- but have done a lot of other foods (cookies, casseroles, etc.). So if it were me I would definitely do the 36" over the 30" :-) It sounds like you would use it w/ all the cooking that you do. Comments (31)HU-207928320: The Bluestar RCS and RNB gas range ovens do not have a cooling fan. The only fan that they have is a convection fan that you can manually turn on with a switch on the front panel. So, if you do not turn on the convection fan, the only sounds while baking are the occasional click of a relay that turns the burner on and off to regulate oven temperature and the quiet whooshing sound of the gas burner itself. It is essentially silent during baking unless you choose to have the convection fan running. Edited for accuracy: As M correctly points out, the Bluestar Platinum series of gas range ovens have a "European style" convection fan that is automatically controlled and can not be turned off separately from the burner in the rear wall of the oven. Comments (35)@itsourcasa yes we did purchase the Verona Induction. We've been using it for a few months and absolutely love it. Easy to use. And it is even so much faster and powerful than our vintage gas range which was really great. We don't miss the gas "power" at all - there is plenty of power with induction.
