Window over Sink Advice, for new construction

Builder plan has standard window over sink, with upper cabinets on each side (see photo). It is an L shaped kitchen with average size island. I intend to maximize storage with lower cabinet drawers and a large wall pantry cabinet (not the corner pantry in model). Some ideas to add light:

1. Bay window over sink; 2. Eliminate some of the upper cabinets (need to keep some for storage near dishwasher) and then (a) larger bay window, or (b) two or three windows across.

Possibly room for open shelving? For me, would only put decorative items on open shelves, not dishware. Might store dishes in lower drawer but will have glass front upper cabinet for glassware.

Also, I’ve seen bumped out windows where the bottom of the window is directly above the countertop, see second photo (from Houzz). Any experience with this? Thanks!
