Hi RJ, I would only install a ceiling fan if this room is used as a more informal area. As for lights, you do not need as much given that you have plenty of big windows. Some recessed lights might be a good fit.

If I do use it for dining it might not be used for dining on a daily or regular basis. For style I am not sure but I don't want anything boring but not flashy/gaudy either. I would want simple style lights with dimmable LED bulbs and not too many nooks or grooves for easy cleaning.

For style I prefer simple with dimmable LED bulbs and not too many nooks or grooves for easy cleaning, and something that will last very very long and not easily go out of style over time. Basically once it's on there I don't want to touch it again for as long as possible.

If I ever need to re-do or change lights then I need to fix the walls which is something I really don't want. So I'll have to think about that for a bit longer. @RL Relocation LLC Forgot to ask, right now the bottom of old light is 65" off the floor, and top of it is 80" off the floor. I wonder what the correct height should be.

put the table in place then hang the light 30 inches off the top, that is the best way to do it, because the size of the fixture itself is likely to change.

Well if you don't want to do track lights or can lights cutting into the ceiling... why not get a few floor lamps or table lamps after you get your furniture in. They don't need to be expensive. I think you need to figure out if you're going to put a dining table in the dining area or not. That would hugely influence what sort of light you might put there. If you do have a dining table, I'd keep some sort of pendant. A Nelson Bubble lamp would look excellent, not too flashy or gaudy but still interesting and not boring like you said, gives off diffuse light in all directions which looks nice on faces and food, and in my opinion timeless and would work well with your vaulted ceiling.

@RL Relocation LLC Are ceiling lights designed to be adjustable on the vertical hanging so that for different dining tables with different heights the 30" can still be maintained ?

B. buy a pendant on a pully
