Yeast amount - cold ferment pizza dough

Last week I tried a cold rise pizza dough and my results weren’t pretty (first pie stuck to the peel, ended partially upside down on the baking steel and partially all over the oven, subsequent pies were baked on pans) but I liked the taste the dough had developed. So I’m looking around at recipes, and one thing I‘m noticing is a huge variation in the amount of IDY called for, anywhere from about 1/4 t per pound of flour, to a 2.25 packet. Does it really not matter a lot, or does the amount change drastically between different hydration levels?
