We wouldn't have this issue if we were face to face, but it's hard to convey everything in text alone. Being a huge bad movie, horror, gore fan...I'm very in tune to the various coming zombie apocalypses. I'm not in the pocket of big agriculture, nor do I use/promote GM crops or chemical culture. I don't use either on my own vegetable garden aside from a light chemical fertilizer (aka, Miracle Grow). I just work in/around some of the "evil" (very indirectly, mostly end-user farmers), but most of the research and work I've done involve how to use less resources...that's where agriculture research is. Less water, less pesticides, less chemicals...part of this, unfortunately, is the role GM crops play in putting less of these other inputs into the soil. For us managing a few dozen to a few hundred rows of crops we don't need it, but when a person is planting/managing 100 acres+ things get a little harder. I'm not happy where GM is going or the companies pushing it or the governments that can't even get patent law under control approving most of it and letting judges with limited knowledge battle it's roll-out. Comments (15)Penn State's agricultural service (food safety division) says slicing or burpless varieties aren't well-suited for pickling (mainly a quality rather than a safety issue) but that they can be used in bread and butter-type pickle recipes or in relishes so finding the right recipe can make use of at least some of the surplus. If you want to mix some of the white cucumbers in with the green, you can. It's a pickling cucumber, so sure. Keep in mind that time will change the pickles, so they may be great initially but not hold up so well over time or the delicate flavor may be subsumed by the pickling brine. Only time will tell. In that case the benefit may be principally aesthetic, but there's nothing wrong with trying to make your pickles "pretty." Comments (9)I finally made a cake with the Meyer Lemons that fell from my tree. Grainlady, I thought I had coconut oil but I didn't. I looked where I normally shop and wasn't happy with what they had so I wound up using the quick lemon cake recipe that Shambo posted and my lightest, virtually flavorless, olive oil. I still think that the slight coconut flavor of coconut oil with the lemon would be great and I have put it on my phone shopping list. The spicy lime mayo you posted is definitely something we would love and I just looked at their website and one of my local supermarkets sells it, so it's on the list too. Thanks for your help. Sherrmann, coconut oil has been controversial, but from all the reading I've done, I feel it is healthy. We all have to make our own decisions on lots of foods and I will be quick to admit that I often feel there is conflicting research on all sorts of foods. I love butter too, but since my very serious heart surgery I have to be careful about how much I use. Coconut oil has no cholesterol and no sodium and butter is very high in cholesterol. I certainly do eat some butter, but it's in my best interest to limit it which is why my original question was to ask what to substitute for some of the butter. Comments (19)Hi PammyFay, I guess they're for the "tight-assed" folks, do you figure? We have trouble with some brands when putting them into septic tanks - they don't disintegrate ... so my neighbour says. I'll need to get a list from her of what to buy/avoid ... but, since I live alone, and try to do my business when away from home, to save that shrinking paper (1) ... I imagine that it'll take a long time to fill the tank! (Then, of course, some might accuse me of being, " ... full of it", as well).
