Comments (30)I checked my Speed oven, the max temp is 450F, check to see what the max temp of the Elux OTR is. I believe it was Antss, that said , unless it is 220-240 volts it really cant act as an oven---maybe some other folks here---have some inputs on the 120 volt units?(Like the Advantium for example).Anyway, a good first start, check the max temp of the Elux OTR. Thank you for the kind words too. Our granite is called "Arandis Gold" It is a Brazillian Granite, and is in the "Juperana Family". You may have noticed that we are bit of rebels when it came to backsplash, but I like to look in and see the granite without having to stand over it, also as we have a lotta roses and I usually have a bouquet there, You can see the reflection of the roses in the granite---you know, without grout lines---that's just "Our Personal Preference" and not saying this is for everyone--but we took out tile to put in the granite and I just didn't want to mess around with grout, anymore--and not crazy bout "grout lines" in the reflection of the roses (LOL). I will "clean up" the kitchen a bit and show more pictures in "Our Next Contest" (which I will issue a "Challenge" to Mojavean in my next post!!(LOL) Good luck on your pending decisions, hopefully you have friends and/or neighbors that might have some of the "mini-ovens" you are considering! Comments (12)Twice baked potatoes is on our family Christmas meal every year, has been forever and "they" will not let me change menu, you know that tradition thing. I hand pick my potatoes for size, zap in wave for maybe 4 minutes and then finish in oven giving the skins a crusty finish. Scoop out, add shredded cheese, butter, sour cream, bit of garlic, salt and pepper, (sometimes no salt and use Lawry's Seasoning salt), 1/2 &1/2 if needed. Scoop back in skins, add shred cheese and bacon bits for garnish. I make these up one to two days ahead, refrigerate and bake towards dinner time. I freeze leftovers. Comments (8)I have both the large Nesco and the smaller 6 quart and use the smaller one regularly to bake potatoes, it does a wonderful job. I don't like my baked potatoes wrapped in foil, as they do get "steamed" and the skins aren't nice and crunchy like they are just baked in the oven, so I just rub the potatoes with olive oil or butter, add some salt and put them right on the rack. Remember, the Nesco is really just a small oven, and anything you can do in the oven you can do in the Nesco, from baked potatoes to pot roast. I've made brownies in mine in a pinch, and used it as a bain marie for cheesecake. Here is a link to the Nesco site with lots of recipes, that'll give you a feel for what you can successfully do in it, I think. Comments (19)Experiment. Spices are a bit of a passion/obsession of mine. I make all my own blends with whole spice. A greek blend is a good place to start. Just look out for spice blends that have salt as their first ingredient. Salt and pepper are cheap so it is used as a filler. Some also use corn starch and msg. Also cheap. Corn starch is great as it adds crisping-while-baking-texture especially for sweet potato fries. I prefer to add that on my own. Too much and it adds an odd flavor same with msg. I don't have issues really but don't use msg at all. I really like taking a 1/4 cup or less of avocado oil in a small bowl, as it does not mind high heat cooking, and add rosemary, dried or fresh, garlic, dried or fresh, and a pinch of sea salt. Overnight if possible or just a few hours to 'bloom' the flavor of the dried spice. Soak your potato wedges in cold water to remove starch for an hour, then dry and into the fridge, uncovered, for a hour or more. Easy to do if a protein or other parts of the meal need prepping. Skip it if you need to move on and bake right away. Toss in the seasoned oil and bake. The Greek blend as Ann_t mentioned has just about the whole kitchen sink.
