Anyone Here Ever Prepare Dover Sole?

First time I've seen this in the Publix seafood section. I've heard of it but never eaten it. It looks like a very fragile fish. Maybe simplicity is best? I've looked online and seen a lot of recipes for Dover Sole Meuniere (French) where it's lightly floured and pan fried. Is this the best treatment for this fish?
