Is it true that gloss / semi-gloss cabinets will yellow?

I had someone paint my kitchen cabinets white, and just 5 years later a lot of the cabinets have a yellowed and accumulated dirt (90% around where you would touch the cabinets while opening). I have tried everything imaginable to clean them to no avail. The cabinets were supposed to be a gloss finish, but only the large panel on the side of my fridge looks gloss, the rest looks satin or

I'm having someone else repaint them, and my new painter is telling me that if he does a semi-gloss or gloss finish they will yellow over time. Is this true?

I've never heard of that, only certain clear coats.

Are your doors flat, or raised panel? If they are flat, you can roll with a foam roller to get a more even finish. Raised panel requires more work and brushing. If you can remove the doors and lay them flat, you can get a better finish. If you overbrush the paint, it will show brush marks. Also, use a soft bristle brush. I prefer High Gloss myself. I would not use Pro Classic. I would use a better grade of high gloss finish. I would not use a poly over the paint because it will affect the color sometimes. I did my old cabinets in Polyurethane Oil Gloss White. It looked great, but because of the oil, it began to yellow over time.

I always use a high gloss when painting cabinets or trimwork. It's more durable than the lesser gloss paints. Given the scrubbing that cabinets can get, as well as the wear and tear in opening and closing doors, etc., I go for durability over any consideration. I actually find high gloss to be both traditional or contemporary. In older homes you will see the woodwork done in a glossy oil based paint, which is similar to the high gloss sheen of a latex paint. I wouldn't do less gloss and then do a clear coat myself...so much work for basically the same look as a high gloss really. It is true that flat paint shows less blemishes than the higher glosses, but flat paint is never appropriate for a cabinet (IMO and many others).

Working with a custom kitchen cabinet maker and their standard is Matte finish. I’m having painted cabinets. I liked Diamond Cabinet color Lambswool but noticed they have a slight sheen. Has anyone gone with Matte and if so how easy are they to clean etc.

I have a semi gloss finish on my navy cabinets. My kitchen leans traditional, definitely not modern / contemporary. I see every finger print, smudge, etc on the island and fridge / freezer doors... wherever I have navy. Even when I think everyone's hands are clean, they leave marks. I'm constantly wiping my fridge and freezer panels, which are high-touch surfaces. I'm not type A or a ridiculous clean freak, but this bothers me greatly. If I could do over (which I'm not), I would not opt for any type of sheen or gloss finish. My perimeter cabinets are white with a matte finish. I do see food splashes, drips, etc, which I also clean. But for some reason the fingerprints drive me bonkers.

Absolutely, many of the clear coatings used on cabinetry are prone to yellowing, and this is particularly evident on white cabinetry. While I am still researching this myself for our upcoming kitchen project, what I can tell you is that the only completely non-yellowing finishes must be waterborne. Look into ICA or Milesi coatings which have some great waterborne finishes. Sherwin Williams' industrial division can also provide information on waterborne finishes. One of the favorites of painters is in the United States is Sherwin Williams' "water white" lacquer for cabinets, but it isn't waterborne so will yellow slightly in time, just a little less than average.

Oil based paint without the clear coat will also yellow. Its possible, that they were painted with oil based paint, 5 yrs ago.

This is why solid acrylic doors wear better over time. They do need the occasional repolishing. Laminate is also another good choice.
