Penny tile layout

I see a LOT of discussion here on the issue I have - I don't want to beat a dead horse but would be interested in what Beth H has to say as she weighs in on this often. My pic is my 1st dry layout of my guest bath floor. Underlayment is level and flat. I offset/staggered the first tile layouts and adjusted and such and I can still see the seams! I really want white penny tile with a pewter color grout.

Pros and others: What other than staggering tiles can I do? Will white thin set help? I'm not so worried about the tiles at the walls or door but I can clearly see the grid lines.
