Cast Iron Enameled vs Granite Composite vs Fireclay

We're building new, cook a lot, particularly Italian, and are looking for a durable, preferably white, single bowl, 7-9" deep, unfermounted sink (will also have a smaller prep island one).
We love the aesthetics of the cast iron enamel and some of the granite composites, but my wife is worried about long-term staining and fading. We'd obviously love scratch, stain, chipping resistance in a perfect world, but alas.... I hate the scratching and noise of SS, not to mention its look (I used to work in a commercial kitchen, and it reminds me to much of this), but my wife hates staining so much she's willing to do SS and forgo white for it (we had a porcelain one years ago that stained easily).
I've read many posts from 2006 to now on this topic, but it seems like the granite composite reviews were only a few years old. Anyone have any thoughts or updated experience to share?
