Comments (10)We've gone back and forth and back and forth with this exact same decision - Sully vs. Citeaux. In the end, we're leaning towards the Citeaux. Definitely contact Elisa at Frenchranges.com. She'll see if there is anyone in your area who has one and then you can visit one in person. The Citeaux is new, so the only caveat is you may not be able to see one live unless you're willing to go to NYC. If you have specific pans you're worried about using, send the dimensions to Elisa and she will see if the pan fits or not. For example, I wondered if my popover pan would fit in the vertical convection oven and it does. She had the technical department check it to confirm. Also, one of the things that swayed me to the Citeaux was Chef Marty (on the Lacanche thread) talking about how he uses the warming cupboard to slow cook and I can totally see my husband doing this. Comments (5)I have the Chagny 1400, we entertain a lot also and do all the holiday dinners. Yes the ovens are smaller, but that has not been a problem for me. I have the warming cabinet and really like it. BTW warming cabinet does so much more than just keep food and plates warm. The small petite oven gets used for roasting veggies and my husband likes it to bake his cornbread. I would encourage you to contact the folks at Art Culinaire, they are wonderful and are most helpful. They can arrange for you to visit a range owner so that you can experience the range first hand. We are in a similar decision point right now, planning on a Lacanche Vougeot for our kitchen and thinking of a Miele CSO XXL for the spice kitchen. Based on reviews, it seems like the Miele is fantastic for re-warming food, but the online manual suggests that it doesn't actually have an official keep warm setting (beyond a 15 minute default after food is done cooking). Comments (15)I also had a similar concern. My mom is Chinese so I do a lot of stir frying and want the burner to be as hot as possible. The French top range also has an 18k burner, but it is set lower. Art Culinaire allows you to buy the Classique (with the 18k burner the same level as the other burners) and purchase the traditional (French top) grates separately. However, the flame will be very close to the french top grate and the flame may be erratic. Given that I will likely use the wok ring, I don’t think this will be an issue for me. The grates are available in stock in their warehouse, so if you decide on the Classique top and want the French top grate afterward, you won’t have that long lead time. Speaking of lead time, I haven’t received my range yet, so I can‘t speak to whether this hack works well.
