What to do with Tongue and Groove Ceiling?

My whole main level has tongue and groove installed above the beams on my ceiling. Previous owners painted the beams and "pickled" the T&G. Overall the whole thing doesn't look great. It doesn't help that the T&G isn't especially quality wood.

My dilemma is that I don't know whether it would be better to paint the T&G and repaint the beams, install drywall over the T&G, or replace the T&G (if that's even an option). Since the T&G ends are above the beams, I don't think I could replace the T&G without tearing the whole roof off.

If I paint the T&G, I worry that I'll lose some of the character of the home. It's even more of a concern if I install drywall. However, I'd imagine ripping the whole roof off to replace the T&G would cost and arm and a leg. Who would I hire to do that? A roofer? Carpenter? Both?

So, final question: paint, drywall, or replace?
