How do you use your senses when you cook?
Comments (26)I use smell, but I think I use sight more. How can you "smell" when onions are transluscent? I suppose they might have a certain smell at that point, but I think I use sight more. I never really thought about it before I guess!! I usually taste at the end to adjust seasoning as Annie said. Now that I'm thinking about it, I guess I do use smell a bit more than I thought. When I'm making things like Cuban black beans or chili, I do smell to make sure I have enough spice - I can smell whether there's enough cumin for example. But in dishes that have to cook a long time, like gravy (spaghetti sauce), it doesn't make sense to taste until you're getting towards the end because the alcohol in the wine needs to cook out, the different ingredients need time to meld, etc. I guess whatever works for you is the right way to do it! Comments (24)Just me, one dog, and seven cats. The bird will be first done on a Weber grill. Charcoal with some hickory wood... indirect heat. Wings for snacks, breast meat for sandwiches, and the rest with carcass will be boiled for chili meat. Dolly dog gets all the skin unless I nibble some extra crispy parts. Cats get a bit of lean meat because they are household members. Boiled clean bones will go out to the garden where Mr. Possum will munch them down. Chili meat will be cut half and half with beef... round roast. Enough for about four pots of chili so most will get bagged and frozen for later. I have a 12 quart chili pot so it takes a couple pounds of meat for a batch. Work gives me this turkey every year. I like boiling the carcass because it uses the bird down to the last bit. My oldest sister is doing T-day and Grandma is doing T-day part two. Comments (24)I am like rhizo never boiled a ham ever. I buy smoked hams that are actually fully cooked from the smoking. I put it in the oven to heat up. If I get a little picnic shoulder ham I cook them in the oven till tender. Usually put some kind of fruit juice in with it, pineapple, orange, Apple etc. And I sometimes glaze the hams. If I get a raw pork ham roast, not smoked just raw from the pig, I do those in my big roaster pan in the oven or my electric roaster oven and cook till internal temp is done. Just like a regular roast. Sometimes I cut slots and stuff with onion and garlic. Comments (29)With the wildlife I have that visits my yard who leave their droppings etc. I lack concern about putting the used heavily urinated litter around my plants. Last night once again I was left with gifts on my patio. Most of those articles while they are correct that body waste can contain things that do go into the ground water they have not done any research in ways household garbage is handled including bagged kitty litter. In this area at least it is put into big mounds and compacted. You can frequently see trenches or drainage ponds to hold the liquid from the rain that washes through the mound. Those drainage ponds are allowed to seep into the ground or evaporate until they are full of particles. At that time they are either capped with dirt or dug out and the solid materials taken elsewhere. For a while those solid particles were spread on a field as an experiment to see what grew best. They no longer do that as it was discovered it concentrated heavy metals of various sort. So the short of this is that the kitty litter will eventually enter the ground water which is what most are concerned about....See Morebragu_DSM 5
