I've been a happy KA fan for years. I use their AP, unbleached cake, bread (not recalled, thank goodness), and high-protein flours with success. I can't imagine what lvmadison means by a "better" quality of flour. In the thread on looking for a better flour, I asked what lvm didn't like and didn't see an answer. I have a batch of bagels made with KA Sir Lancelot flour rising right now. I made two batches of cookies over the weekend with KA AP and KA cake flour. My friends loved them and took a whole lot home to share with their spouses. Over Lunar New Year I used KA AP for long-life noodles which got many compliments and requests to take leftovers home. I really don't know what would make these recipes "better". Cheryl

Great demonstration. I have been looking at mixers and like the Bosch in general appeals to me because there's no mongo head in the way of putting in ingrediants - trouble is - They seem to have 2 basic models now - a small one in 400w or 450 watts and a big one? I don't need a big one but haven't seen anyone who actually has a current model small one. I guess I like to hear from people who have whats for sale now if possible. Course they change things so fast these days its getting harder and harder. Looks like good bread and good soup! Thanks

Maxmom, it makes the cake velvety and tender, and it seems to last longer without going stale. I notice a definite difference in the quality of the texture when I use it vs. when I forget to use it. One thing I would caution is to sift it into your batter as it tends to clump and it's hard to get all the lumps out without over beating the batter. It's a bummer to have a big clump in your finished product but it's happened to me when I don't sift! Also a little bit of their espresso powder in my chocolate cake does wonders. Last night I made Guinness chocolate cupcakes with Baileys buttercream using King Arthur cocoa, flour, espresso powder and cake enhancer. :)
