When Is Fish Properly Cooked?

Or perhaps better: 'Can All Fish Be Properly Cooked?'


Because I just slowly fried some crumbed basa fillets and the flesh never did get firm, totally opaque white.


Does that mean the fillets were too old?


Can old fish be properly cooked?


Or they needed even longer cooking?


They were on a low heat on a big hotplate (i.e. one that gets pretty hot) in an aluminium frypan (i.e. which also gets very hot very quick) and they were there, cooked both sides, until the bread crumbs began to get seriously overcooked: going black.


I don't think I've ever had that happen before.
