Best Type Of Fry Pan for cooking lake fish!

Hi,

I am currently using a Calaphon 10" Nonstick Commercial Fry Pan that has no stick left so I have to clean it each time. Call the company up and total to use Soft Scrub/Bartender's Help to remove the film that prevents the nonstick feature from working. I have try it like 3 times in a row - scrubbing it and then riinse it off and doing again and still the pancakes stick to it like it was glue.

So I am seek opinions as to what to use to do my fish frying in. I just use a little olive oil and cook it with the lid on for like 2 minutes and turn the fillet over and cook it again.

to clean it I just take a paper towel wet it and clean the insides and after it cools use the soap and water with a brush on it!

So should I use aluminum, case iron, stainless steel or aluminum copper lid? Or anything else?
