Do you really want the grout to be a feature? I'd go with the closest match to the tile, which is either the top or the bottom. If this is supposed to look like wood (can't tell from this small piece), then it's especially important that it not really appear to have grout, or the illusion is ruined.

The cabinets are blue and the island is cream. My walls are also cream. Appliances are stainless steel. My floors are dark lvp.

What are you planning for the brick? Paint, whitewash, or limewash? All are different. Are you planning to do it yourself? You do realize you’ll go from zero brick upkeep to brick upkeep? It stains, it peels it flakes. Moisture gets trapped. It can damage the bricks. Limewashing isn’t some perfect application, either, and usually has a ten year lifespan. It’s nice looking brick, I wouldn’t paint it based on a fad already on its way out. I’d consider resale, too. And work on landscaping and other updates that aren’t permanent.
