Candied Figs from my Grandmother

My grandmother, always made what she called "Candied Figs" or "Fig Preserves" I used to help her and it was just figs, water, and sugar cooked until it was a thick syrup. She then put in canning jars, while it was hot and let it seal. When we did jelly, it had paraffin over the top, but I do not remember that over the figs.

I haven't had a problem until this year, because there weren't enough figs, but this year the tree has out done itself! Any recipe I find online uses lemon and I KNOW she did not use lemon. Can I can them for the shelf or do I need to just freeze after processing? We never died or got sick in 30 or 40 years, lol.
