Savory Herb Cheesecakes

I have a ton of fresh herbs in my garden and while watching "A Taste of History" there was mention of a Parmesan Cheesecake, that whetted my mental taste buds. Found a recipe on "What's Cooking America" that was very poorly written but had the ingredients that sounded good - a savory Parmesan crusted cheesecake using a filling with a variety of fresh herbs. The disjointed recipe did not match all of the listed filling ingredients in the how-to so I went off to find an almost identical recipe with the rest of the ingredients on "Cook Eat Share" -- that I can not find again since their search function doesn't. So - bottom line - have any of you made a savory cheesecake? I like the idea of Parmesan and bread crumbs for the crust as it is salty and with fresh herbs and creamy cheesecake should be a delight to the palate. I did find a few savory recipes that called for cans of celery soup in the cheesecake that totally blew my mental taste buds to the aghhhh-pitouy side.

Have made a savory blue cheese cheesecake before. Not all that many herbs included as the blue cheese reigns supreme. Was a major hit at the function I took it to. No cans of soup - just cream cheese, blue cheese, eggs and some seasoning. Maybe sour cream (can't remember). And a cracker crumb crust.

I made a smoked salmon and herb savory cheesecake once. Cooking it gave me a reaction to the fish, so I can't say how successful it was, objectively. I think the guests liked it. I tried to use my spidey skills to find your recipe, but no luck. Are you sure it was Cook Eat Share? My best luck came from googling "recipe cheesecake filled with fresh herbs". Still didn't find it, though. I did find the one with a parm crust and cream cheese filling at What's Cooking America.

Did you see this one at heirloom gardener? It's more like a cream cheese tart than the kind of ricotta based cheesecake I was thinking of, and I'm not sure I like the sound of Worcestershire sauce in it, but it has some merits.

The last 5 years we worked to remove all of our lawn; have finally reached the point today that our whole yard is a garden filled with flowers and edibles and NO LAWN! The bees, butterflies, hummingbirds and numerous other birds are very happy to find Dill, Holy Basil, Lime Basil, Red Rubin Basil, Lemon Basil, (plus more), Comfrey, Bee Balm, Elephant Garlic, Detroit Red Beets, Onions, Egyptian Walking Onions, various Swiss Chard, Strawberries, Carrots, Crinums, Amaryllis, Rain Lilies, Daffodils, Grape Hyacinth, various other bulbs (what can I say...they are EASY), Agastache, Salvias, Iris, Cannas, Bluebonnets, Mums, Spiderwort, Asparagus, various Mints, and Blackberries, Blueberries, Pomegranates, Peach Trees, Apricot Trees, Pear Tree, Plum Tree, Apple Tree and Pecan Trees make nice with Red Oaks, Redbud, various Crepe Myrtles, Russian Sage, Hardy Asters, various roses (yes, I CAN grow roses!), Oleanders, various Hibiscus, various lantanas, Caryopteris, etc. And to all that are mixed in the veggies and annual flowers. I'm an open book...still learning how to use everything we are growing, such as teas, etc. Next on the list of "To Do" are ponds and chickens (our one bunny is lonely). Thanks to all the great people on GW who shared their seeds, cuttings, plants, bulbs, advise, etc., I now have a wonderful place to escape the world while I enjoy Mother Nature! Peggy

Here's a couple of recipes to start the ball rolling! Sweet Rosemary Slices 2 eggs 155g brown sugar 1/4 teaspoon vanilla essence 155g plain flour 1 teaspoon baking powder pinch salt 1 tablespoon rosemary leaves or 2 teaspoons dried 250g raisins and candied fruit (angelica, glace cherries, candied pineapple etc) 185g pecan nuts, chopped OR sunflower seeds Preheat oven to 190C. Beat the eggs, gradually add sugar and vanilla, mixing well. Sift in the flour, baking powder and salt. Add rosemary, fold in the fruit and nuts. Spoon the mixture onto a greased and floured 20cm baking tin and spread out evenly. Bake for 30 minutes. Remove from tin while still warm, allow to cool, then cut into slices. Lemon Thyme Cookies 125g butter 3/4 cup sugar 1 egg, beaten 1/2 teaspoon vanilla 1 tablespoon milk or cream 1 teaspoon grated lemon rind 1/2 cup fresh lemon thyme leaves, finely chopped 1 1/4 cups flour pinch salt 1/4 teaspoon baking powder Preheat oven to 180C. Cream butter, gradually adding sugar, and beat until light. Add egg, vanilla, and milk and blend thoroughly. Blend in lemon rind and thyme. Mix flour, salt, and baking powder and sift into butter mixture. Blend well. Drop by teaspoons on a greased baking tray and bake 8-12 minutes, until lightly brown.

Here's Katie's recipe and here's another just for good measure! Posted by: KatieC (My Page) on Mon, Dec 9, 02 at 17:24 I'm making these for our Christmas party at work: Jalapeno Cheesecake Recipe Serving Size : 20 Preparation Time :0:00 8 ounces cream cheese 5 ounces sharp cheddar cheese -- grated 2 cloves garlic 1 egg 8 ounces jalapeno jelly Mix first four ingredients together with half of the jelly. Pour mixture into greased 6- inch springform pan. Bake at 350 degrees for 35 minutes. Cool completely and remove from pan. Heat remaining jelly and pour over top of cheesecake. Serve with chips and/or crackers. PESTO CHEESECAKE CRUST 1 cup breadcrumbs 1/2 cup grated parmesean cheese 1/2 cup melted butter Mix all together and press into 9" springform pan. Bake 10 minutes. FILLING 4 (8 oz packages) cream cheese 4 eggs 1/2 cup heavy cream 2 cups pesto (from the refrigerator section of your grocer) Beat with electric mixer. Pour into prepared pan. Bake at 350* for 1 hour. Chill several hours or overnight. Remove from pan and decorate with a little chopped tomato or chopped sundried tomatoes. Slice into very thin slices and serve on small individual plates - or - cut into thirds and place 1/3 on serving plate and use to spread on crackers or baguettes. Be sure to decorate with a little chopped "red" tomato accent and maybe some green basil too. Looks beautiful! (If you cut into thirds, you can serve 1/3 and freeze the remaining for another time.)

I think they all come from the book. The last one is the nicest, in my opinion, and has a few words about using the food processor, like the poster actually made it.

I make one with the recipe from KatieC, and I top it with my Habanero Gold, it's well received but doesn't have a crust at all:

JALAPENO CHEESECAKE
8 ounces cream cheese
5 ounces sharp cheddar cheese, grated
2 cloves garlic
1 egg
8 ounces jalapeno jelly

Mix first four ingredients with half of the jelly. Pour mixture into greased 6 inch springform pan. Bake at 350 for 335 minutes. Cool completely and remove from pan, heat remaining jelly and pour over top of cheesecake. Serve with crackers.

I think it would work just as well with herbs instead of the jelly, and thanks for the reminder. It is creamy and "spreadable", I've not tried to serve it in slices. A parmesan crust does sound good.

I hake one similar to Annie's....but a mixture of grated parm and sharp cheddar in the cheesecake....... Then put the pepper jelly on top as "frosting"....

I made a raspberry one a couple of days ago but it would be easy to adapt. 900g ricotta, 4 large eggs, add your cheese and herbs, bake 1 hour. No crust.

I love savory cheesecakes. For our DD's wedding appetizers, I made six or seven different varieties -- cheddar and chutney, blue cheesecake, Mexican cheesecake, crab cheesecake. You can add herbs to any savory cheesecake recipe and actually, you can add herbs to a sweet cheesecake as well -- a lemon one would be good with some basil added, an orange one or chocolate one with rosemary.

We never slice ours, preferring instead to eat it more like a "cheeseball" -- in fact, I call it upscale or gourmet cheeseball.

Annie -- your jalapeño one sounds good. I need to bring an appetizer on Thursday and may, indeed, make that!

Martha, I made 6 of these for my stepson's "appetizer reception", as well as 6 with various fruit jellies, served with various crackers. I put a spreader with each one so they could just scoop off a portion. There were fruit cheesecakes left, but none of the pepper ones.

Crab sounds interesting, I have to think about that. Hmmmm.
