Comments (5)Unless you decide to go with an induction cooktop, I would definitely get gas. Cooking with gas burners gives you so much more control than electric. Whether to go dual fuel is a bit more of an issue particularly since it costs a good bit more. Some people prefer electric ovens for baking but a good gas convection oven will bake just fine and will actually be better for roasting meats. Comments (3)When I started my research for my kitchen remodel (about three months ago), my initial thoughts were strongly towards Thermador (for the range and refrigerator), and Wolf (I eliminated Viking due to quality concerns, and I hadn't yet heard of many others like BS, American, DCS, Aga, etc.). Then, I noted that Thermador doesn't offer all gas or open burners, and I better understood that my use of the oven didn't require the electronic functions (nor did I want the risk of having them burn out), and I thus eliminated Thermador even though I love the look (but function is much more important to me than style and looks) and it's star-burner shape does make it probably the best of the sealed burner options (ignoring output) IMO. If one wants to be a better cook, and understand the need of function over looks, then I can't see how one can pick Thermador, given the choice. I would pick BS or Wolf all gas instead. Comments (4)This topic has been discussed on the Appliances Forum. The consensus is that the idea that all gas is not as good for baking is a holdover from decades past and is no longer true. With today's ovens' better insulation, better thermostats, electronic ignitors, you will not have any more problems baking in a gas oven than you would in an electric oven (assuming same manufacturer and price range). Furthermore, typically an all gas oven will have less electronics, which means less to break. If you get an all gas oven with a convection fan, then there won't be hot spots - most gas ranges on the market now have convection. Frankly, I think the upcharge for a dual fuel range over an all-gas range is a ripoff by the manufacturers. BTW, I have an all gas oven (like you, I didn't want to have to pay an electrician to install wiring). I bake everything, and everything comes out fine, including delicate souffles, butter cookies, sponge cakes, puff pastry, you name it. I also get a nice crust on meats from the gas oven.
