How to specify paint on level 5 drywall finish

Next week we are installing new drywall with a level 5 finish in a West-facing kitchen & family room with lots of windows and direct sunlight. It's the showcase of the house. Paint is BM Regal Select flat (already on site from other parts of the house).

What should I be asking/looking for in specs from drywall/painters? I'm open to a pro detailing a different preferred method but want to start with specs to try and avoid vague descriptions or inaccurate quotes. What I'm thinking:

- clean surface of all mud dust

- spray & backroll pvc primer

- after 24 hours lightly sand with 220 grit, vacuum

- spray 2 coats flat BM Regal Select

- backroll each coat one direction with 3/4" microfiber

- lightly spot sand between coats

- final coat with floetrol

Any steps completely unnecessary or counter-productive? Missing any?
