pruning overgrown hardy kiwis - developing a plan, need help

thats pretty much it. they were burned to the ground two years ago and have been growing crazy since. I'm trying to establish a form now without putting too much undue stress on the plant. Currently theres 2-5 trunks on all of them and I've thinned out all the water shoots that are growing straight up. I want to get it into as much organization as possible but I dont know how much pruning is too much in one season or if i should wait until winter.

also, when the pruning books talk about removing "vegetative growth" how do you ID that type vs the type that is good for buds next season? I would hate to ruin another year. to me the straight up growth that has leaves every 6'' or so is obviously water shoots and not much good but what about the others?


I've read somewhere (but I cant remember where) that you can prune them similarly to muscadine grapes (which i am pretty familiar with) does anyone else do that (ie, 2-4 cordons with spurs)
