Ceiling to floor. If you're going to open and close them, they need to be 1/4-1/2" off of the floor, so get the longer length and have them hemmed. If stationary, they can "break" on the floor. We haven't seen any puddling in our workroom for a few years now. Ideal length. "Breaking on the floor"

I hate shower curtains that cover up all the nice tile work get a glass door and add color with towels and accessories and a throw on the bed in one of those colors

Mainenell - Definitely the 95 inch curtains - Put them at whatever height will allow them to just barely hit the floor (just above). Usually we recommend curtains be a width and a half for a single window. When making custom ( I know you're not), the fabric is 54 inches wide, and we go 1 and a half of that per panel or side. So that's 80 inches per side. You will never get that fullness with ready made drapes. Just get a full as you can. Get a wider rod than 40 inches. You'll want to place the rod so that most of the curtains are outside the window. It makes the window look larger and have more presence. A good rule of thumb is to put the rod brackets 3 - 4 inches or so away from the outer edge of the trim.

Love your sofa!! Beauty!! I like your room a lot! I might pull the couch off the wall a bit. And add a coffee table and maybe side tables. You can add curtains but I personally don’t think that they’re necessary. Maybe you can add a bench under each window. Or by each side of the fireplace.
